I guess it is indicative of the era in which I grew up, but whenever I see the word "hash" (in the context of food) I always have a mental picture of a cook in a greasy-spoon diner, wearing a stained apron, perhaps with a cigar clamped in his mouth, with a big pan full of shredded meat, potatoes, onions and so on in his hairy fist. In short, not the refined sort of thing I generally associate with Japanese cooking. ;) This looks lovely, thanks so much for showing us how this is done.
