I prepare barley in my rice cooker, one part barley/two parts water, chopped onion, frozen vegetables and black pepper, garlic powder, curry powder, and a splash of fish sauce. Once it’s cooked I stir in a bit of olive oil. So inexpensive and easy!
I had some barley I my pantry and so I rinsed it well then cooked in in home made chicken broth, with onion and garlic. Then I took it and in a large frying pan added the barley onion mixture to 2 diced tomatoes, garlic fresh spinach, shredded cooked chicken ,added 1/2 cup of left over black beans. So good!

I like my simple porridge barley. I buy rolled barley just like rolled oats.
