RECIPE - Chocolate Chip Toffee Bars
Ingredients:
¼ cup softened butter for greasing baking dish
2 1/3 cups all-purpose flour
2/3 cup packed light brown sugar
¾ cup cold butter (1½ sticks)
1 large egg, slightly beaten
3 cups semisweet chocolate chips (I use Ghirardelli)
1- 1½ cups coarsely chopped nuts (I use pecans)
1 (14 ounce) can sweetened condensed milk (NOT evaporated milk)
2 2/3 cups SKOR toffee bits (2 8ounce bags)
Directions:
1) Preheat oven to 350℉
2) Grease a 9 X 13inch baking pan with ¼ cup softened butter. Set aside.
3) Coarsely chop nuts to equal 1-1½ cups; set aside in a small bowl.
4) Measure out 3 cups chocolate chips and 2 2/3 cups toffee bits; set aside in separate bowls.
5) Measure 2/3 cups packed light brown sugar.
6) In a large mixing bowl, combine 2 1/3 cups all-purpose flour with the 2/3 cup packed light brown sugar; stir to mix.
7) Cut in ¾ cups COLD butter using a pastry cutter until mixture becomes crumbly and butter is well incorporated into all the flour/sugar.
8) Add beaten egg to flour/sugar/butter mixture and mix well until totally incorporated and dough is formed.
9) Mix in all of chopped nuts and 1½ cups of the chocolate chips. May need to use hands to form the dough.
10) Retain 1½ cups of this dough for topping. Distribute remaining dough on bottom of baking dish to form bottom crust. Bake 10 minutes in 350℉ oven.
11) Remove baking dish from oven, gently spread all of one 14 ounce can sweetened condensed milk over hot crust.
12) Evenly sprinkle 1½ cups toffee bits over the sweetened condensed milk layer (avoid placing toffee bits too close to side of baking dish to make cutting easier)
13) Evenly sprinkle retained dough over the toffee bits to form top crust layer.
14) Sprinkle ½ cups chocolate chips and ½ cups toffee bits over the top crust dough (again not placing toffee bits too close to edge of baking dish).
15) Bake for 25-30 minutes at 350℉ or until crust is golden brown.
16) Remove from oven; while still hot, sprinkle remaining 1 cup chocolate chips and remaining 2/3 cups toffee bits over top crust.
17) Cool completely in baking dish on wire rack. Cut into bars!
