    RECIPE - Cajun Chicken Alfredo
    Ingredients:
    1½-2 pounds boneless, skinless chicken breasts
    3 tsp Cajun seasoning
    1 tsp cayenne pepper
    1 tsp course black pepper/ 1 tsp Kosher salt
    3+ Tbsp olive oil
    16-18 ounces fettucine
    ½ cup butter
    4+ cloves garlic, minced
    1½ + cups heavy cream (additional to thin sauce as needed)
    16 ounces (~ 4 cups) shredded Parmesan cheese. *
    8 ounces shredded mozzarella cheese*
    *(Fresh hand-shredded best, store-bought pre-shredded OK)
    Directions:
    1) Trim, rinse (if desired- then disinfect sink); Refrigerate in a medium bowl.
    2) Fill a large covered stockpot with water; set on med/low heat to heat to simmer.
    3) Measure out spices into small bowl: 3 tsp Cajun seasoning, 1 tsp course black pepper, 1 tsp Kosher salt. Mix together; set aside.
    4) Measure out 3 Tbsp olive oil into another small bowl; set aside.
    5) Skin and mince 4 cloves fresh garlic (a few more if you’re a garlic lover!); place in small bowl; set aside.
    6) Using a box grater, shred 16 ounces of fresh parmesan and then 8 ounces fresh mozzarella cheese. Set aside in separate bowls.
    7) Prep chicken: Roll out a large sheet of plastic wrap, lay chicken breasts out on it and cover with another sheet of plastic wrap. Use meat tenderizer to pound chicken breasts to an even thickness (~ ½ inch). Season with spice mixture on both sides.
    8) Heat a large skillet over medium heat, add 3 Tbsp olive oil. When oil is hot, add seasoned chicken and cook, turning to brown both sides. Check for doneness.
    9) When done, remove chicken to a plate to rest. Clean skillet with a paper towel then add ½ cup butter to melt. While butter is melting, turn up heat under stockpot bringing water to a boil, then add pasta to cook.
    10) Add minced garlic to the melted butter, cook only until softened and fragrant (~3 minutes). Check on pasta periodically. When done, drain in colander; set aside briefly.
    11) Pour 1½ cups heavy cream into skillet; mix well with the cooked garlic until hot.
    12) Once hot, add the shredded Parmesan cheese then the shredded Mozzarella cheese, whisking well after each addition for complete incorporation.
    13) Add cooked, drained pasta to cheese/cream sauce. Toss thoroughly to coat.
    14) Slice chicken, serve with sauced pasta.
