    Browned Butter Butter Cream
    Yield: Makes enough to fill and ice an 8-inch cake
    What you need…..
    3 cups (675 g) unsalted butter, at room temperature
    8 large egg whites (about 1 cup/240 ml)
    1 cup (200 g) granulated sugar
    Pinch of salt
    1 cup (120 g) confectioners’ sugar
    2 tablespoons Madagascar bourbon vanilla
    How to make this……
    The night before making the buttercream, place 1 cup (225 g) of the butter in a sauté pan over medium-high heat.
    Heat the butter until brown flecks appear. This will take 10 to 15 minutes. The butter will boil for a few minutes and then will settle and start to brown on the bottom. You need to keep your eye on this! Once the boiling settles, the browning happens very fast, so be sure to start stirring at that point. When you see a good amount of brown flecks, remove the pan from the heat and pour the butter into a bowl. Cover and let the butter cool overnight at room temperature.
    The next day, in the top pan of a double boiler, heat the egg whites, granulated sugar, and salt, whisking constantly, until the sugar is dissolved. Heat the mixture slowly to avoid cooking the eggs!
    Transfer the mixture to a stand mixer fitted with the whip attachment and whip on high speed until stiff peaks form, about 5 minutes.
    Reduce the mixer speed to medium and add the remaining 2 cups (450 g) butter a little at a time. Add the browned butter, confectioners’ sugar, and vanilla and mix until incorporated.

    About JJR:

    I was in love with a boy in highschool but could never leave his friend-zone, and though we were close, a few years after graduation we drifted apart and aren't keeping in touch anymore. But to this day I use the chocolate chip cookie recipe he gave me some 15 years ago 🥰

    My first boyfriend bought me a fake light up rose at the skating rink & they come with a little card which he wrote "will you go out with me" on the inside. We didn't go out very long because we were 13 & long distance but my little sister married his cousin who lived down the rd from us. We were new kids to the area so he walked home with us their first day of kindergarten & he told our oldest sister he was going to marry Lindsey someday. 18 years later they got married & now they have 3 kinds & just had their 15 yr wedding anniversary.

    I'm in New Zealand and when I was a little kid in Standard 3 (I think that's maybe 4th grade in US money?) the pinnacle of boy-girl romantic relations was to get someone to swap one of their little school photos with you (every year you'd get a class photo and an individual portrait taken and if your parents bought copies they'd throw in a strip of four little passport-size versions of the individual portrait with the order). I managed to get the most gorgeous boy in class to swap pics with me and I was walking on air on for weeks. We didn't hang out or talk to each other - are you kidding me, boy germs, am I right? - but it was still a peak achievement 🥰😎💘

    I'm 42, and I totally remember Lisa Frank everything!!! Thanks for the shirt idea...already hit up the website. lol So in 6th-8th grade we all just folded these 'love letters' using some kind of origami ninja skillz that looked like an envelope. In it were the most romantic words written : Do you like me? Yes? or No? with a box or line in front of them for checking off. And of course your friend either gave the note to the person you crushed on or you flicked it at them during class.

    Cute middle school crush story: He runs up to me with a hap-hazardly folded note, just as the recess-end bell rings. Then he runs away. The note was so sweet, and still gives me feels when I read it.

    Retro dating memory: in 11th grade, I was a legend because I dated an "older" guy (he was 19) who had heavy metal long hair and looked like the singer Sebastian Bach (90s version). He liked when I would wear Maybelline Bubble Gum lip gloss. I loved that stuff.

    I can't believe it took me a year to find that you guys have ur own channel! 💖 I was a MAC sub, and was super sad when it ended.     I’ve watched every one of your MAC videos and I love your work, I’m so glad I found you over here! I’m active duty Military and I love baking, but don’t have time to actually go to pastry School. So my “education” comes from watching your RUclips and just going for it. I enjoy how you show how you make certain decorations for your cakes, I’m slowly working myself up to doing one of your designs hopefully mines turn out half as good as yours. Keep up the good work, love you videos.
