@@MoesSmokeStackGrill I used equal parts salt, pepper, garlic power, onion powder for the dry rub and added that smoked paprika as you suggested. It’s was great. And I’m a bears fan not looking to good for us this year! 😪

Depends on the size. Most chefs cook to temperature instead of time. 125° internal will land you in that nice medium rare roast beef area. A good meat probe is key.
