Gobi Manchurian is an Indo-Chinese dish that I discovered when travelling in NE/E of India. A good ketchup is fastest way to make this. Not sure if you can replace with a sweetened tomato purée. You could make 2 versions and test.
I've seen ketchup all over the world. Heinz is the best! Nothing better that Ketchup sandwiches; white Hovis medium slice with anchor butter or if you've gone to Jersey, some salted jersey butter! Bosh!
