great recipe! just a tip, i hope i don't come off as rude. it's not really advisable to stir the okra with a spoon, just occasionally lifting the pot up and swirling it around is enough. you avoid breaking the okra.

My first time seeing someone cooking okra like that. I just put everything in the pot and let it cook👌 You can add a few veggie leaves which gives it an amazing taste, absolutely delicious.

The steps to cook it are different in Cameroon.But i ll try youy method.It looks.like it turned out great.Also we usually add smoked fish or meat to the okra soup to eat along with "nshima"☺
Soda helps to soften the okra and it gives it a great taste. It's one of the vegetables that here in southern part African does not require many ingredients to enhance flavour
You can cook without it dear.. But make sure you cut the okra very thin...though it would be that sweet. In the older days you could use the ashes of charcoal but you have to soak them few days before cooking
Actually Soda is when a strong alkali and a weak acid are combined. The resulting salt is that Soda and so this result acts as a weak base. Soda is far from being acidic. Sorry, the science in me could not help correcting that lol!!! Crushing the okra is better. That I agree.

One thing i have noticed about Southern African cooking, you hardly use pepper unlike West Africa where pepper is almost compulsory!

Here okra is one vegetable we don't mix with meat or fish. I'd like to taste the Cameroon version

Soda is acidic for the body, my advice is to crush okra using blender then cook without soda the results are much better.

Guess U used bicarbonate for the colouring.
Malawian thelele uses only the leaves of okra . It’s slimes to eat and really an acquired taste.
