I'm pretty sure, from memory, you're supposed to put the rice on the rough side of the nori sheet, because that way it looks nicer when you roll it up. I may be wrong though, but my Japanese teacher taught us that way, and I may just be pedantic :P
time like this makes me remember about how tall Chris, PJ, Dan and Phil are gosh if they stand next to me even if sorted food stand next to me I'll look like a dwarf next to them
Ginger is supposed to be eaten between sushi because it's a palate cleanser. That way the different types of sushi don't mix flavors. Also... don't refrigerate your sushi. It damages the sushi rice and changes the texture.

The law means basically, don't drink, because getting pissed is not a responsibility that the legislator trusts you with yet. A little bit of alcohol left in the hosomaki or using white wine to finish a pan fry isn't illegal in any way.
@Dinkleplush The beauty of any recipe is that it's just a guideline... why not make them how you like! Chicken wouldn't be traditional... but probably quite delicious! Try it and let us know! :D
also, if you put a little bit of rice grains as glue to help stick the end seaweed bit to the roll then you don't need to use water - using water makes the sushi too soggy sometimes. And if you use sesame seed oil instead of vinegar to help the rice stick it tastes so much better (won't last as long though, since the vinegar helps preserve the sushi).
@iiRawrrrx3 You can just use a white wine vinegar... but if you're going to make it then why not make it as authentic as possible. They aren't expensive ingredients and last forever! :D

The mirin? Sake's a good substitute if you can get that, or just doubling up the vinegar with some extra sugar would would work too. I've heard that sherry, marsala, or some white wine with sugar all work as substitutes as well, but I've not tried them myself.

I just basically rinse the rice once then, leave it in the rice cooker with equal parts water. When it's cooked, I season it then and there. And the water I use to mold the rice has vinegar and salt. My grandma taught me. lol.
@XPURPLElemonadex why not make the other two versions... with avocado and/or spring onion. And even the crabstick one can have cucumber substituted for something else. :D

@asaam07 with the japanese flavourings (mirin, rice wine vinegar - you can use other vinegars, wassabi and dipped in soy sauce) they are full of flavour. Give them a go! :D

I come from a place where we eat rice everyday using chopsticks...so watching this is kind of fun. Lol. Ben, where I'm from the draining of the rice in the beginning is to clean it, the "excess starch" is actually the healthiest bit of the rice that we want to limit losing.
@ch3rryp3psi I agree. Cold hard rice sushi is like the stuff you buy at the grocery store (gross). Good sushi is fresh and has rice that is a little warm soft :)
This could not be more perfect timing. I needed a cheap little meal to take with me when I have late shifts at my new work experience (delivery ward wahey!). Sushi is a perfect option as it's easy to make in advance and quick to eat. Thank you sorted :) (maybe a nice little salad next?)

Maybe I'm doing it wrong, but when i eat sashimi i put a strip on top of the fish and dunk it in soy with wasabi and then proceed to eat it :P

It's actually a kind of white wine with a lot of sugar in it (about 40%), so you can use sugar and white wine, or sugar and vinegar for replacement.
