It has a gluten content somewhere between plain and bread flour. You can make your own cheats version by mixing half and half. Just make sure it is VERY well mixed.

Make a few holes in the butternut squash with your knife, put it in de microwave for a few seconds to make it softer and thus easier to peal/cut/handle :)
I made these last night with my boyfriend for his family. We also made your chocolate pistachio fondant for dessert, and let me just tell you - both were DELICIOUS! It took us 4 hours to do both recipes though... are we doing something wrong? But a lot of that time did go into measuring out ingredients (we're American, so we had to convert from grams to tablespoons/cups). Some of the pasta on our ravioli was a bit thick, but my boyfriend got a bit lazy with the rolling pin by the end.
I'm currently living in a university residence which doesn't have a kitchen and watching you guys make "real" and delicious looking food is making me so upset that I don't get to make food like that here :(
This might be a stupid question, but when you say butternut squash, is that still the same as a butternut pumpkin?? because they look the same, and living in australia i know a squash to be a different vegetable altogether... like i said silly question but i thought i might as well ask, because who knows :)
My mom sticks the butternut squash in the microwave for 2-3 minutes. Apparently it makes the skin a lot easier to peel; she does it with a vegetable peeler instead of a knife :D a lot less wasted deliciousness

@auroraskyz It has a slightly higher % of gluten. You can mix bread (or strong) flour with plain (all-purpose) flour to get something similar.

@chippetuss Regular flour will work, but won't be as stretchy and easy to roll out. the pasta flour has extra gluten in it.

Normal flour works fine... you might just have to knead it a little longer to get the same elasticity.

I always make these using wonton skins for the pasta- readymade in the grocery store.
