    It has a gluten content somewhere between plain and bread flour. You can make your own cheats version by mixing half and half. Just make sure it is VERY well mixed.

    @auroraskyz It has a slightly higher % of gluten. You can mix bread (or strong) flour with plain (all-purpose) flour to get something similar.

    @chippetuss Regular flour will work, but won't be as stretchy and easy to roll out. the pasta flour has extra gluten in it.

    @justjukie08 yeah, sweet potatoes work well... a bit more starchy and therefore filling, but great none the less.

    @KrOHime Can you find bread flour? If so use half regular and half bread. The extra gluten makes much better pasta. Worst case scenario... you just have to knead it a LOT more.

    @fitzgeraldmw If you serve it without the sage butter (just a drizzle of extra virgin olive oil instead) and maybe leave out the Parmesan from the mixture then it's not 'too' unhealhty

    Something quite savoury in taste to balance the squash. How about tarragon?

    Save this tasty seeds!
    Preheat the oven to 60°C, wash seeds on the sieve and lay on the roasting tray. Keep in oven about 1 hour (stir them few times) with doors open just little bit.

    Normal flour works fine... you might just have to knead it a little longer to get the same elasticity.

    Make a few holes in the butternut squash with your knife, put it in de microwave for a few seconds to make it softer and thus easier to peal/cut/handle :)

    I made these last night with my boyfriend for his family. We also made your chocolate pistachio fondant for dessert, and let me just tell you - both were DELICIOUS! It took us 4 hours to do both recipes though... are we doing something wrong? But a lot of that time did go into measuring out ingredients (we're American, so we had to convert from grams to tablespoons/cups). Some of the pasta on our ravioli was a bit thick, but my boyfriend got a bit lazy with the rolling pin by the end.

    This might be a stupid question, but when you say butternut squash, is that still the same as a butternut pumpkin?? because they look the same, and living in australia i know a squash to be a different vegetable altogether... like i said silly question but i thought i might as well ask, because who knows :)

    My mom sticks the butternut squash in the microwave for 2-3 minutes. Apparently it makes the skin a lot easier to peel; she does it with a vegetable peeler instead of a knife :D a lot less wasted deliciousness

    Can I use a Hokkaido/ Red kuri Squash as well? You can't find butternut squash that often here.
