I am trying this! I just cleaned up my turkey yesterday and put it in the freezer in quart size bags. Was originally going to make turkey noodle soup but this is even better! Yum! Got to see if my store sells parm rinds. I will also add Maldons sea salt flakes as well.

Serendipity! Just cooked off the turkey carcass for stock and decided to make this. Excellent! And I don’t care that much for turkey soup. 🤷♀️ The use of the parm rind and the couscous are inspired. They provide sweet nuttiness that is unexpected. IMO, this is all dependent on whether you’ve roasted a turkey, how, and whether you made your own stock. So many variables. But give it a go - SO tasty!
I actually made a turkey soup for our first course on Thanksgiving. I didn't for that soup, but whenever i make chicken soup i always add a green at the end like kale or spinach or escarole.
I couldn’t find couscous by that name here in Brazil. Do you know what this ingredient is called here? It looks great for adding to soup! Thanks for the recipe, it’s really good!

For those who can’t have gluten, try cauliflower rice in the soup instead of pasta. Excellent!
