ingredients
4 lb pork belly or pork shoulder cut into 1-inch cubes
1 large onion, chopped
15 garlic cloves, chopped
1 cup chicken stock
1/4 cup oyster sauce
1/4 cup hoisin sauce
1/4 cup dark soy sauce (dark in color no sweetness)
1/4 cup honey
1/4 cup shaoxing wine or sake
2 cups water
handful cilantro
cucumber
red or green chili

I made this tonight and it was out of this world!!! I was worried it would be too fatty and rubbery, but it wasn't at all. The fat renders out of the pork belly and I actually took a lot of it out of the pan, a good cup's worth at least. I did add about 2 tsp of Chinese 5 spice powder, the flavor was a bit one noted without it. I didn't add the two cups of water, only 1, it still took about 25-30 mins for it to reduce and get to a glaze-like consistency. Overall a delicious recipe that I will make again, my 65 year old mother loved it too!
i made this for the first time yesterday and i am in love!!, the pork is so nice, honestly i expected it to be really chewy because of all the fat but its really not. i want to try this pork with other foods now and not just with bao. thank you for the recipe!!😍😍💕
I just made these gua bao with homemade bao (bun buns!) and they were fantastic! This is definitely going to be on permanent rotation in my house! I served with julienned pickled veggies (carrot, cucumber, daikon, red pepper). So pretty with all the colors. This sauce is so good it would taste great on anything -- chicken wings, beef, pulled pork. Thank you Seonkyoung Longest!! You're right - these are insanely good!

This is the first recipe I've seen that doesn't use Chinese Five Spice. I'm not a big fan of the powerful licorice taste either, so I'm excited to have run into this recipe. This would be so good to make on a cold, fall day.
