3 eggs, separated Dash of salt in whites 1T gelatin powder slowly added to whites, while whipping until stiff Whisk yolks until pale yellow Add 3 T collagen to yolks Fold in whites gently 1/2 at a time. Fry in bacon grease, butter or ghee. Form into pancakes gently. Low heat 8 minutes, covered. Gently turn when golden brown. Cook another 5 minutes.
I fixed these pancakes this morning, and they were just amazing! So light and fluffy, the texture was similar to eating a crepe and a souff souffle all in one. Delightful experience will make it again!
I just made this recipe this morning and I was pleasantly surprised by how good it taste. I put the batter on my cuisinart griddle at 400 degrees and let them cook for about 2 minutes. Then I closed the top and made one big flat pancake. I figured I would see how it taste before worrying about them looking like a pancake. It was delicious. No eggy taste in my opinion. Thank you for giving us this recipe.

These are THE best pancakes ever! They’re so delicious and don’t taste like eggs, though I was mentally prepared for them to. This is absolutely going to be a keeper on my more timely weekend breakfasts. I find it easy to scoop the batter and mash down with the scooper ever so slightly, or not at all. I dusted mine with cinnamon. 😋

Fascinating recipe. I will need to get gelatin and collagen. I have been carnivore now for 17 weeks. I would only put butter or maybe heavy cream on them, No to erithritol or other artificial sweeteners.
How do you think they would be as a bun for a burger? Or best as a pancake and not a bun? I'm looking for something for my husband to help him get over the old way of eating.
@cathymarsh8327 They may get a bit soggy if used for a bun. If you try that you may watch the sauces. I do have a keto hamburger recipe video on my channel that you may want to check out 😃

amazing recipee! I used the recipee (substituting the collagen peptides with pumpkin protein powder).The resulting mixture i put in pyrex deep plate and cooked 5 minutes in microwave.So I had the base for my spinach pie I put the vegetables on this base and cooked again in microwave 15 minutes.Amazing pie!I would use peptides but did not have any.

I usually don't comment but I just tried these and they turned out fantastic!!! Before these I tried recipes with almond flour, cream cheese and pork rinds, nothing turned out like pancakes but these have! The only difference I found between these collagen pancakes and real pancakes is that these are very light and have no weight which gives a bit of a cotton candy effect (when they dissolves into 'nothing' in your mouth). but besides for that they were absolutely delicious and were so fluffy and easy to flip! I've skipped the vanilla extract and added a teaspoon of glycine to the egg whites. Thank you for this recipe! It's a keeper! :) P.S. My batch turned out with a really nice browning (just like real pancakes!) I wonder if it because of the glycine? Or maybe because I used butter for frying them?

I added it to sweeten the pancakes instead of using sugar/erythritol/allulos because I wanted to keep the recipe carnivore and with zero carbs. I wonder if that's why my batch turned out with the nice browning effect. Seriously amazing recipe!
