Yes! I’m half Filipino half Chinese and I love adobo. When i would come home from school and see all the windows open in my house, I knew my mom was making adobo. She always said the vinegar stunk up the house 😂 ... or binegar in her accent 😂😂😂😂

I grew up eating adobo with potatoes, its the other way around for me cos i find adobo incomplete without potatoes.
Sometimes, i add carrots too
I’ve never had adobo without potatoes and I couldn’t ever imagine eating it without it! Maybe it’s a regional thing? The potatoes absorb all the flavors from the sauce and it’s just the most bomb flavor. My favorite part of the dish! 🤤

Your tweaks to your moms recipe look like how I would want to eat chicken adobo. This will be cooked in my house by the time the week is up. My mom learned to cook this when my dad was overseas. We also ate it with potatoes

I love your recipe and every time the dish comes out delicious over jasmine rice and side salad! I modify the light soy sauce to a low sodium light soy sauce and skip the corn starch. My husband and my sons love it! Thank you for sharing!

You add potatoes it should naturally thicken the sauce, I never used corn starch and only potatoes and it thickens it! But this looks beautiful!

I'm definitely going to add potatoes and onion to my chicken Adobo next time. I was taught to use apple cider vinegar have you ever tried it?
My grandma always used apple cider vinegar growing up for Adobo as it’s a bit more bitter or biting in flavor. As I’ve gotten older, I’ve just grown more fond of using white vinegar but both work the same.
