Scotcheroos Recipe:
1 1/4 cups honey
3/4 cup light brown sugar
1 1/4 cups creamy peanut butter
1 tsp vanilla extract
6 cups crispy rice cereal
1 1/2 cups semi-sweet chocolate chips
1 1/2 cups butterscotch chips
1 Tbsp Shortening
Flaky sea salt
In a medium saucepan, add your honey and brown sugar then place on the stove over medium heat. We are getting the sugar to dissolve and the honey to thin out so stir frequently for about 5-7 minutes, but make sure it doesn't boil. Remove from heat and stir in peanut butter and vanilla.
In a large bowl pour in your cereal and peanut butter mixture and stir together, coating the cereal completely. Then pour the mixture into a 9x13 pan with baking spray. Spread the mixture evenly across the entire pan.
In a microwave safe bowl or using the double boiler method, combine your chocolate chips, butterscotch and shortening/coconut oil. Place into the microwave on 30 intervals stir in between until completely melted and shiny. Then pour the chocolate mixture oven the cereal in the 9x13 pan. Spread evenly and sprinkle with flaky sea salt. Refrigerate the bars until firm and cool. Cut and enjoy!
