Specialty crops are the ones that we think of as fruits and veggies. I know some will disagree with me, but I managed a farm- including seed ordering. It’s far more involved that many realize. So seeing non-gmo on those food labels is the same as seeing “gluten free” on milk…. It’s already free of that. They label it just to try and increase their sales.
I heard as of February 2024 GMO purple tomato plants are being sold to the general public.PUBLICLY this will wreck your seed saving folks so beware at garden centers!😮
I've never made jam before, untl this year. I went a little overboard. I made 4 flats of peach jam and 1 flat of pear tutti-frutti. Watching my family smack their lips while eating my peach jam is worth all of the effort. I used regular pectin and had to use a ton of sugar. I picked up a 1 pound bag of Pomona's. I hope that will last a while.

Looks delicious. I want to share with you my finger saving trick for handing those hot jars while putting on lids. I bought some rubber shelving liners and cut a strip about double the size of a dollar bill. I use it folded to hang onto the hot jar while putting on lids and rings. That size is perfect for half pints to quarts. And it doesn't move on you while using it. Plus, it's easy to clean.
Yes, and thank you on no canning season! I'm just getting into the winter canning cycle. I'm canning more apple butter tonight. Tomorrow I'm canning cushaw squash and apple pie filling. I hope that will be the last of the apples, except what I'm saving out for eating and baking.

Good stuff! I recently bought a 20# box of pears from Azure. After all the peeling and slicing, I wish I knew about this option. It was very satisfying getting it all done though because it yielded 7 quarts and 4 pints of canned pears, but, man, it was work! LOL!!! Thanks for sharing.
What a great idea!!! My favorite vanilla ever is Neisson-Massey bourbon vanilla. I buy the 32oz which is around $100 but works out cheaper than buying it in some stores. I heard Wegman’s has 8oz for $25. Occasion my TJ-Max, Ross, and Marshall’s will have it for $12 a bottle. Prices as of last summer. I know it’s expensive but it’s one of my splurges because it is that good.

Ok I’m having issues with back and got a shot in back not in spine. Had five shots because Bruce said I had five bandages on my back. It was to work for 24 hrs . Then if it worked on too next step. It was a 4/5 after being an 7-9 10 being bad and sometimes a 10. So I get it, you need to do what’s best for you. If others don’t like it oh well so be it, Jam looks good,
I made something similar to this last winter but did not use canned pears, this will be a game changer! I also layered shaved semisweet chocolate between scoops of the jam when putting it into jars, wow that was really good. 🎉

I was giften a couple pounds of dried figs from a food pantry and thought a fig jam or chutney would be so good, but don't know if it's possible or safe to do for canning?

I’ve never seen a steam canner before!! Can you steam can in a regular pot like a crab pot? Looks like two pots nested together, the inner one has holes in it, the bottom one has an inch of water and use a lid. Thanks!!

That looks amazing I am going to try this one but first I have to figure out if I did my apple sauce right. I have a couple of ?'s. Please, you don't have to debubble jam? By second ? is a help me please?. This is the first year I canned. I canned apple butter and didn't have a problem, I used forjars and everything sealed good. Fast forward to making apple sauce, I messed something up. I filled my jar to the head space, debubbled- there was a lot of bubbles but I worked at it and got them out, wiped rim, finger tight lid. Steam canned my apple sauce 20 minutes like the recipe called for. Took them out and let them cool. Things went wrong after that, well I am not sure if it went wrong I just never heard anyone mention what happened. The apple sauce raised for to the top and liquid was at the bottom, if you turned them upside down a bubbles went to the bottom of the jar (the jar is upside down) also the apple sauce raised to the top is really thick and looks like there is air on the sides of the jar. I don't know what to do the seal is amazing no problem there, so I don't know what to do I have 38 pints of applesauce and I am afraid I ruined them. My one sister said don't worry about it, they will be fine, really cause you don't mind maybe killing someone. Another sister said eat the cost of the lids, empty them into a pot/roaster/slowcooker and cook it down some more, or you can drain the liquid using a cheese cloth. I am so frustrated, they don't can anymore and years ago when they canned there really wasn't much rules like now. I am not sure if some of them might of siphoned or not and can you recan them, there was a couple jars that were sticky. Trust me those jars sealed but I don't trust it if they siphoned. Help please anyone. I emailed the ruler of the canning rules but have not heard back yet. IF I can recan them is there a time limit to how Long they are in the jars before it is too late. Thanks so much I don't make sense I am sure, I just need advice. Thanks for all you share

The last thing I canned was pickled Brussels sprouts, The rings gave me SO much trouble. 3 of them unscrewed just fine, but the other three were really stuck on there. After trying really hard I got 2 of the rings off, but no amount of running water on them, using brute force and ignorance, or handing them to my husband could get the last ring off. It's still on there nearly 2 weeks later. It's unscrewed enough that it's not holding the lid down but short of cutting it off I don't see anyway to remove it.

I just wanted to add something I found out about labeling for "bioengineered" food. The law was passed that manufacturers had to make it known on the label if the product contained GMO ( same thing as bioengineered food. However, some companies have gotten around actually printing it. If you notice a QR code on the can, scan it and it will "tell you more about our product ( it's GMO)." Or if there is a phone number listed, you can call it "for information on our product."(it's GMO). So even if technically you don't see it written, legally, it's there. Sneaky buggars.

It says food that contains detectable genetic material must be disclosed. Either stating on the label, or a logo saying it it, or a QR code you scan to find out if the product is bioengeered, or a phone number to call or text. There can be exemptions, or loop holes. Products where the first ingredient is meat, poultry, or eggs, doesn't have to follow this law, because it is under a different set of regulations. How long have we already be using these products, and will we ever know the truth. Also smaller businesses, such as food trucks and such, do not have to disclose any information on their products.

I like Pamona's pectin because you can half or double a recipe. I always get a 4 oz jar ready, just incase I don't have enough to fill a 8 oz.
