  • Ripening of fruits and vegetables involves a lot of physical and chemical changes which make the fruits and vegetables edible and leads to significant changes in the composition and quality.
    This lecture enlist such physico-chemical changes involved in the ripening of fruits and vegetables and provides an insight on chemistry behind these changes.
