Cherry Pie Sugar Cookie Cups | Easy Christmas Cookie Recipe

  • Cherry Pie Sugar Cookie Cups are easy and beautiful cookies to make for Christmas this year!
    Cherry Pie Sugar Cookie Cups
    (original recipe from lemontreedwelling.com)
    1-16 oz. tube refrigerated sugar cookie dough
    1/2 c. granulated white sugar
    1-21 oz. can cherry pie filling
    1 c. powdered sugar
    1 Tbsp. unsalted butter, melted
    1-2 Tbsp. milk
    Preheat oven to 350*. Cut the cookie dough into 24 even slices. Pour 1/2 c. granulated sugar onto a plate or shallow bowl. Roll each slice of cookie dough into a ball. Roll each ball into the sugar to coat evenly. Spray a 24 cup mini muffin tin with baking spray then place one dough ball into each cup. Bake at 350* for 15 minutes. Remove from the oven and press the inside of each cookie cup down (if necessary) to create a well. Spoon about 1 Tbsp. of cherry pie filling into each cookie cup. Bake for 3-4 minutes. In a small bowl, whisk together the powdered sugar, melted butter and milk until it is smooth and pourable. Drizzle the glaze over the cookie cups. Cool completely before eating. Store in the refrigerator. ENJOY!

    I roll my dough in cinnamon & sugar and put sweet potato filling..

    I baked these in blueberry and cherry open face mini muffin size. I used paper muffin liners. They were undoubtedly delicious. However they were extrememly fragile.
    If I were going to do them again, I would knead a 1/4 c of flour, as the package of cookies recommends. And grease the top and edges of the muffin cups really well, even with the paper liners.

    I used extra homemade cream cheese and lemon cookie dough within the muffin tin then added cherries etc ...
    Very nice ...and easy

    Can these be made ahead? I bought everything to make these for Christmas. Only problem is, If they can’t be made ahead I won’t be able to make them as I have too much to do on Christmas Eve to prepare for my Christmas dinner. I’m so hoping I can make them a couple days ahead because they look and sound amazing. Thank you.

    How to store without getting soggy

      I stored mine in a Tupperware in the fridge and they lasted for a few days. The sugar cookie cup is quite chewy so it doesn’t get soggy easily. Hope that helps!

    How do you get them out of the muffin tin without breaking? Mine stuck to the tin, even though I sprayed it.

      I go around the perimeter with a butter knife to help coax them out. I’ve definitely had a couple stick before but not all…I wonder if it depends on the brand/type of dough you use?

      I just checked the website where I got this recipe originally and unfortunately it doesn’t mention whether or not you can freeze them. I haven’t tried it. I’m sorry I can’t be of more help! I do know that you can make these a few days in advance and refrigerate them!

    I made my own sugar cookie dough and then followed this. I didn’t like them. Very hard to bite into.
