Wedge just a natural pilot/commander. He's just plain good. They DO exist in the Star Wars universe without being "Force sensitive." Luke was a Force-user. There is a difference. The point is, you can be really good at what you do without the Force, case in point, Han or Chewie or Wedge or even Lando. The Force just gave Luke the ability to do all sorts of combination things - the Force, for lack of a better term, is a force multiplier. What Star Wars really lacks is storyline without Force users at all. They've made some decent moves towards it with Andor and the like. Disney, of course, has otherwise completely driven the concept of the Force right into the ground with their machinations and stupidity. It's like they don't understand anything.
I would argue that the the X-wing novels are about as close as anything can get to a Star Wars story without a Force user (or at least, a _known_ Force user) though there are hints fairly early on. But the character in question doesn't know it and certainly isn't trained and those hints can pass you by until it's pointed out in the text to the character. But really, as those novels focus on Wedge himself and the unit he builds, it's really not that surprising that he doesn't choose Force users; he's looking for people who are going to be good pilots.
