I baked them for 15 min at 180 C and later at 220 C for 3.5 mins. But they still look to soft at the inside. Do you know how I can improve?
Yes it's way more time consuming. Before putting the beans you would have to put baking paper in each one so the beans don't bake in the cookie. I would freeze the cookie while the oven is preheeting, that should help hold its shape

Yes, these would translate to gluten free well. Use the same weight of a good all-purpose gluten free flour mix that includes a binder (like guar gum, xanthan gum, psyllium husks) or use the recommended weight of your preferred binding agent as part of the overall flour mix weight. Gluten free baked goods usually seem to work best with a mixture of flours so if you're using g-free flours you have at home, make it about 60% starchy flours like white rice or tapioca or potato starch, and 40% more wholemeal flours like sorghum/jowar, millet, brown rice, soy, quinoa etc. The biggest mistake is just using one gluten-free thing as a direct sub as different grains behave quite differently and some (like coconut flour) can suck all the moisture out of your batter in a heartbeat. Sorry if that's more detail than you needed! Never sure how experienced at g-free baking people are when asking these questions. 😃
She does mention you can use granulated sugar instead of the light brown sugar she uses. Baking soda and bicarbonate of soda are the same thing, so that's a yes there too 😃

I have a blowtorch about the same size as Sam's. Maybe a wee bit smaller. It's perfect. I haven't burnt anything accidentally yet. 🥰

Fill the cups with rice beforehand and use a parchment paper in between ( scrunch it until it gets soft)
