Just want to say..that red pepper is huge! I live in Florida and that's like 3 Florida red peppers...no kidding! And I just would like to add that I would use all those veggies plus marinated artichoke hearts and goat cheese
The first time I had veggie bars was back in the 70's at a work potluck. I've made them ever since, but it's been awhile. Now I want them! I love the fruit version too and also the taco version! It's like a taco pizza but cold. Have you ever made the fruit version? I'm sure you'd love it too!
Yes indeed that looks delicious! I love veggies! Very versatile recipe especially for picky eaters. Question: Would it work if we stuffed the croissant? In other words, pull apart 1 croissant dough triangle, add the cream filling & sprinkle the mixture on that, & then roll it up & bake it. I know it went in a different direction, but I just am curious if it'd work. Thank you for sharing your recipes. God bless.
I don’t know why that wouldn’t work….You’d still get all the flavors… You could possibly mix all your veggies into the spread and then put it in the individual rolls and bake it like that….😊
I didn’t salt mine… the ranch powder is loaded with enough salt and the cheddar evens it out leaving the fresh veggie taste to be wonderful!… you can salt it more if you want… I just prefer that pure fresh taste you get with the clean ingredients on top of the salty cream cheese/ranch spread 😊

Talli Faye, one time on St Patrick’s Day I made veggie bars using broccoli, cauliflower and carrots to resemble the Irish flag. They were a big hit!

You can do this same concept as a fruit pizza. Using cream cheese and powdered sugar for the "sauce" and fresh fruit
