How to Cook Burgers on the Lodge Sportsman's Grill

  • Cooking burgers over fire can be tricky. Weather you use a charcoal or gas grill the dangers of flare ups abound when cooking grease dripping burger patties. This danger is even more perilous on a small open top grill like an hibachi style grill. Unlike some Hibachi style grills, the Lodge Sportsman's Grill does not have handles to quickly remove the burgers en event of a flare up. It is a good idea to have a plate or platter at the ready to put the burgers on for few minutes while flames die down. Cooking thick burger patties can be even trickier.
    I've been cooking burgers on the LSG for several years, and I've learned a thing or two about doing it successfully. I share what I've learned in this video.
    In the Taste Test scene at the end, I sample the thickest of the eight burgers. It was medium well, just the way I like it. The other seven burgers were well done the way my family likes them.

    So, it was hot day during the peak of the pandemic, but I was determined to throw a barbecue at the park. I invited as many people as I could, but lots of them simply didn't want to go. Perhaps it was health concerns, perhaps it was a rather expensive bridge toll.
    Regardless, the Sportsman Grill was getting lugged to the park. Once there, the park smelled awful, like something had died or a sewer exploded. I'm not sure if it was something from the sea or the acres of goose poop baking in the sun. And despite the stench, the park was packed. There was no good place to sit. After dragging around the Sportman Grill (and lots of other barbecue stuff) to several different locations, we finally settled on a mediocre spot.
    So, I'm hot, sweaty, tired, and angry, but I I fired up the grill, remembering what was learned from this video - AND IT WAS THE BEST BURGER I EVER HAD!

    Since it’s just me and my wife now we use the Sportman for cooking our steaks mostly. One thing that helps rust issues is to take the grill rack off of the coals as soon as your food is done. If you leave the grate on til the coals die out the grate will always have serious rust issues because it burns all the seasoning off every time you use it.

    Growing up in the early 60's, seems like every BBQ grill was adjustable. they all had a hand-crank in front to raise or lower the grill.
    Today, they are gone. Another thing the bean counters "improved". I purchased a hibachi with 4-5 levels of adjustability. I'm happy. It works for me as I am single. If I were married with 5 kids, I'd be stuck. Would have to buy a gas grill where you can raise and lower the flame.
    P.S. Over the weekend, saw the movie "The Notorious Landlady" (Kim Hunter and Jack Lemmon, 1962). Kim wanted to make some "American" food so she bought a basic BBQ to cook steaks. Right there in the front was, you guessed it, a handle to raise and lower the grill! They don't make 'em like they used to...

    Here's a helpful tip for everyone. When blood comes to the top, flip them until you get no blood on top. Then they're done. I never mash mine. Best video I've seen so far. I rate you over Gordon Ramsey and Emeril. Whatever you do never dimple the burger. Ever. I use 73% ground beef for burgers. 3/4lb makes a half lb done. Burned beef fat flavor. Make the patties 3/4 inch thick. They draw up bun sized. I'm a veteran burger cooker. Never mash them. If I had the ability to make a video I would. Instead of the fingering, make them flatter, flip em'. They draw up and retain the juicyness. All in all this is the best tutorial yet. I suggest fattier meat. Good day my friends 😘

    I bought a Lodge Sportsman cast iron hibachi grill years ago for a roadtrip with my family out to the west coast and back. Liked it so much, it was my main go to grill after a couple of gas grills. It's small but with three folks, that was enough. I also made sure I used it far from the house and let it burn out over night. Had to buy another grill top as it gets rusty.
    After watching many youtube videos and not going anywhere but work with the Covid 19, and getting a good deal, I stepped up and bought a Weber Summit Charcoal Grilling Center 24". The Lodge grill has its place and is portable, but the Weber; WOW!

      @@BigLewBBQ Something like $30 for the grate. I did some looking around, a lot of looking around and contacted Lodge.
      I still have it, might be good to use with the chimney to light more coals for the big grill and the occasional road trip. Don't miss bending over to use it. The old grate you could use to cover the grill when done cooking and let it burn out. The Sportsman is the perfect travel grill, you just have to watch windy conditions as you know. That is the good thing now about having a grill with a lid now, and you can cut off all the oxygen.

      @@BigLewBBQ That's a bummer. I only saw the one on the clearance rack. I'm gonna go back Thursday night again and I'll look around for another one. I found this one back by sporting goods on a clearance end rack.

    Nice video! I picked one up that I grabbed out of some scrap metal recently, for some reason someone was throwing it away! Have you used lump charcoal in it? I've got some leftover but haven't tried it yet, was a little afraid it'd be to hot.

    @Big Lew BBQ I just purchased my Lodge Grill yesterday. I look forward to looking your videos and getting tips on how to grill with my new edition! Baseball season is right around the corner!!!

      Silverback AZ it is a great grill. It is portable but heavy. The biggest drawback to it being used for tailgating/picnicking is the time it takes to cool down. Bring a small fire place shovel with you and shovel out the coals when you are done and snuff them out in an old number 10 can our something similar then it will cool faster and yo can watch the baseball games. Thanks for watching. I’m planning a fun video with it this weekend.

      Big Lew! I used my grill on Saturday and it really is a great item. Thanks for the tips you suggested, they I went and picked up the small shovel and the tin can paint bucket. Didnt really need the bucket on saturday but Im sure I will in the future. the shovel, however, came in handy. thanks again brother.

    I use the 85/15 ground beef and I don't have any flair up problems, try it sometime.

    • @Icutmetal
      @Icutmetal 3 года назад

      That does make a big difference, although 85/15 will dry out much easier if not cooked just right and lack the flavor of 80/20.

    I do salmon and tuna steaks! I put a single layer of coal and the grill on high setting. A piece of apple wood on the up wind side so a light smoke blows over the fish 3 mins a side salmon and 4mins a side tuna steak. Clean and oil the grate before putting the fish on I have my door in and air gate open. Fish is done perfectly . Best grill I have ever had, love it!

      jeff camp I love to do tuna steaks on this. Small salmon filets too, larger whiole salmon filets I’ve not tried on this grill yet.. I most often cook catfish on it. In my most recent video I cooked Johnsonville sausages on the LSG

    Looking good Big Lew. I found your channel form your comment on Mr Backwoods channel. The ridges on the new Sportsman Grill grates are a safety feature Lodge added to support the fish frying pan. I was messing with Mr Backwoods to see if me needed one. I posted a pic on his Facebook page. Just subscribed to your channel, looking forward to the new videos.

    • @BigLewBBQ
      @BigLewBBQ  6 лет назад

      Larry Stephens Thanks man, I had been wondering if the fish fry pan would fit with the new ridges since Lodge doesn't make the pan any more. I have the 3052 pan and use it quite a bit even on the Weber and my smoker. Thanks for checking out my channel I cook on the Lodge quite a bit and use the 3052 often as well. The 3052 is featured in my smoked Mac and Cheese video. Once again thanks! I plan to cook shrimp and oysters on the LSG next week.

    So I was debating should I get this grill or go for the Weber Smokey joe? I really love cast iron for the family heirloom aspect but the actual functionality ? Does it give off that summer charcoal grilling flavor ? Or is it different ? And if we did want grill marks in this would we have to have it super hot ? Or the design doesn’t allow grill marks Hmm? Thanks !

    • @BigLewBBQ
      @BigLewBBQ  5 лет назад +1

      Puertoropelu225 it can give grill marks, the slats are wide but the gaps are narrow. I have both the WSJ and this LSG. If price or budget is an issue get the WSJ. It is easier to maintain, lighter weight, has a lid, easier to transport. That being said I would rather cook thin (1/2” )steaks and fish on the Lodge.

    • @puertoropelu2257
      @puertoropelu2257 5 лет назад

      Umm price isn’t really the problem just comparing and pros and cons, I know the lodge will last me longer but Weber is less work and less mess (seasoning, etc) but I do want to have something to have for years to come Idk if the Weber would last that long. But thanks brother I appreciate it definitely helps with my decision!

    Looks nice! If you want to try something new poke a hole in the middle of the burger patty before cooking. It will prevent it from puffing up and you and get a window to see how done it is.

    I use a Cabela oval dutch oven as a lid for my Sportsman grill when making burgers... keeps the flames down and increases smoke flavor. Fits perfectly as though it was made for it.

      @@BigLewBBQ yeah, I'm sort of a cast iron fanatic and convinced myself to buy it after watching the dutch oven rib video on the cooking outdoors channel. Of course i get the usual buyer's remorse, not because it doesn't perform well, but because I questioned how many times i would actually use it as i still prefer smoking my ribs. But after using it as a lid for my Sportsman, it is now a multipurpose item and I am extremely happy i bought it.
