His process isn't uncommon. Starting with audio is very common if the edit is largely driven by VO and also has a specific total running time it has to meet. My guess is he learned a professional workflow while at the marketing agency (the export to ProRes is another clue that he learned a Pro workflow somewhere). Ads and other marketing materials often have specific TRT they must adhere to (ie. 30 second commercial), so starting with the VO, bites and music to cut to TRT, then start adding video on top plus SFX. Sorry I don't know you obviously never seen this channel before but it looks like asmon gold reactions. Maybe u have some good advice. But it's a pet peeve of mine when someone uploads someone else's entire video and then commentates on it. I would be much cooler with it if you linked to the video and I'd be even be cooler with it if you link to the video and told people to go watch it and then come back and only showed certain scenes that you wanted to commentate on. Obviously in this case the original video probably has more views than this one. But still it feels like the principal that matter to me. It's hard to make a video it's easy to watch a video and talk about it. Now you're betraying yourself as an editing expert and maybe you are . But still again I'd be cooler with the examples I gave. Just saying I like the idea of talking about editing on a channel .. I just don't like re uploads. I think there's a balance to be found.
I understand what you're saying and appreciate the explanation, but wouldn't only showing small sections take away from "reacting" to the entire structure of the edit? Although, I do agree with linking the original video and will continue to do that from now on.

I used to do that with short films. Also I think Max Joseph does something similar.
