These won't be unhealthy if eaten occasionally in moderation. I know, hard to do! The ingredients are high quality and apart from the condensed milk, there's little sugar, assuming the chocolate is European plain. The problem in the USA and in some other countries, mine included, is the huge portion sizes in the mass market and a food culture of poorer quality highly processed ersatz ingredients and insanely high sugar content. These are much more sophisticated.
Love chocolate ice cream bars! I love how the chocolate shell forms instantly! And the ones you made without a mold look AMAZING and so easy! You could make hundreds of those in one go!

Made these without a mold or popsicles since I didn't have the sticks. Poured the melted chocolae with peanut butter on to a bed of peanuts and then the ice cream Loved it.

tip: you can reduce milk for a while over the stove so some of the water evaporates and becomes thicker/creamier :)

Well, low heat, not too high. Would probably be OK to scald it, but lower to reduce it is longer but less risk of burning it.
