Quick explanation - The "Rika" curse Yuta uses in battle now is just the way he prefers to manifest his abilities and acts as a vessel. In theory he doesn't necessarily HAVE to use the curse but that's just the way he learned to use his cursed energy.
She could also be a tamed curse spirit based on the pain and loss yuta feels over rika dying, but i think there being lots of possibilities is all we will get , gege just needed a way to bring rika back and might not ever make it explicit
My take is this: most jujutsu characters get their cursed techniques going with something they're familiar with. Yuta, seeing how he could fight alongside cursed Rika, simply created a version of her with his own cursed energy, just like some sorcerers use the cursed energy to clone themselves, or create marionettes.

Think of the current rika as a method of controlling (applying) his curse technique. Remember as well Yuki said that you can only have a number of curse techniques written to the brain at once. Since Rika's vessel was originally just Yuta's cursed energy that had bound Rika's soul inside he technically does not need to use her for his technique however without her Yuta would have that limit so he opts for this application instead.

Manga Spoilers: The New Rika is weaker then JJK 0 Rika, however Yuta can wear his engagement ring in order for New Rika to gain the power that she had in JJK 0. She can only maintain this power for 5 minutes a day though.
