    Recipe: Pork Nam / Som Moo / ສົ້ມໝູ
    Ingredients / ส่วนผสม
    3.0 lb. pork meat without fat / เนื้อหมู 3.0 ปอนด์ไม่มีไขมัน
    10 oz. cooked pork skin / หนังหมูสุก 10 ออนซ์
    1/4 cup of smashed garlic / กระเทียมทุบ 1/4 ถ้วย
    3 tbsp. salt / เกลือ 3 ช้อนโต๊ะ
    1/2 tsp. sugar / น้ำตาล 1/2 ช้อนชา
    1 cup steamed sticky rice rinse with cold water / ข้าวเหนียวนึ่ง 1 ถ้วยล้างด้วยน้ำเย็น
    1 piece fresh Thai chili wrap in Nam Stick / ห่อพริกสด 1ชิ้นในส้มหมู
    4 or 5 Gooseberry leaves wrap in Nam Stick / ใบมะยม 4 หรือ 5 ใบ ห่อในส้มหมู
    2 slices of garlic wrap in Nam Stick / ห่อกระเทียมบาง 2 ชิ้นในส้มหมู
    banana leaf / ใบตอง
    rubber band / ยางรัด
    food color (optional) / สีอาหาร (ไม่จำเป็น)
    Instruction:
    Boil pork skin for approximately 20 minutes check to make sure it cooked and
    then cut into thin pieces as shown in the video.
    Note: make sure there is no fat stick on cooked pork skin prior to cutting

    Nem Chua or Nam(Thai: แหนม, pronounced [nɛ̌ːm], also referred to as nham, naem moo, som moo, naem maw, and chin som) is a pork sausage in Vietnamese, Cambodian, Laotian, and Thai cuisine. It is a fermented food that has a sour flavor. It typically has a short shelf life, and is often eaten in raw form after the fermentation process has occurred. It is a popular Southeast Asian food, and different regions of Southeast Asia have various preferred flavors, including variations of sour and spicy. Nam is used as an ingredient in various dishes and is also served as a side dish. Nam has its origin in Vietnam. Nam originally a Vietnamese type of sour sausage called Nem Chua (sour sausage)Vietnamese immigrants came to Cambodia, Laos and Thailand and brought over this sausage.

    You should open a cooking school. I’d be there everyday. I try different recipes off the internet and they never work out. This is my favourite food from Thailand. I use to buy it in a snack pack at 711.

    I like your version the best. It very important to prepare it correctly, specially when most people like to eat it without cooking. I see other video where they just dumped it into a large tray, covered it with a clear wrap and set aside only 24 hours before eating it raw.

    Hi Gigi, this looks so good. I especially liked the Laoan food processor part of the video. :D. I've never had nam. I'm not brave enough to make this yet. I must find a Lao restaurant to make it for me. That will give me the confidence I need. :) Thanks for the lovely videos.

    I love this traditional and natural way of making Nam! The flavor of the banana leaves and bai really brings out the extra flavor! My Mother makes it exactly like you do, and you are both awesome!!! Thanks for sharing!!

    Hello ma'am what leaves can we substitute here in Philippines we dnt have gooseberry leaves we only have curryplant and Kaffir lime leaves

    I made the pork nam and i left it three days outside on the kitchen counter. It smells sour and i can see liquid inside the wrapped nam, it smells a bit like vinegar. I was wondering is it safe to eat?

    The first time I tried this in nam khao, I was shocked when I found out the pork was raw. Then I realized that the fermentation process would kill any bad bacteria as well as parasites since the pork gets pickled. Now, I eat this every week when I can! Does anyone know what the English or scientific name of that bai-yom leaf is?

      Warren, In regards to your question the Bamboo shoot we bought it from the Asian market, the bamboo shoot was in the tray, they came from the can. Make sure to boil the bamboo shoot for approximately 15 minutes rinse off with cold water before cooking.
