This is Taiwanese style oyster omelette. Oyster omelette originated in southern Fujian province in China and was brought by Minnan immigrants to Taiwan, Singapore, Malaysia etc. I had probably the most authentic version in Xiamen. The omelette was almost all egg and it was topped with numerous tiny oysters.
hi. i noticed you mentioned you are using tapioca starch and not tapioca flour. i looked online to figure out the difference and it says it is the same thing?
Slight correction on the ingredient intro, by gluten flour you probably meant all purpose flour. Also because the Chinese characters on the packaging translates to medium gluten wheat flour. In US specifications that basically an all purpose flour. Thanks for sharing the recipe

Flora Lee Hi Flora - Sorry for the delayed reply, I've been traveling.... Thanks for catching the typo. It's supposed to be 1/2 cup of potato flour for the omelette batter. (Oops 😮). I'll make a note in my video once I get back to a real laptop computer. Take photos and let me know how you like it.
snowgurl330 Sometimes potato starch and potato flour are interchangeable. If that's all you can find it's worth a try, but look for potato flour if you can. You can also test a bit of potato starch that you have. Mix with a small amount of water and try cooking it to see how the texture turns out.
Gluten flour is different than gluten rice flour, right? Some of those flours and starches I have not seen in the store here. I'll have to keep an eye. I've asked my mom to make this and my grandma... Both said they could make it, but it's too much of a pain to make... So looks like I'm on my own. Haha

You should look for potato flour or sweet potato flour at the Asian supermarkets. www.angelwongskitchen.com If you don't have a Taiwanese night market near by, making it yourself is the next best thing. Once you find the potato flour & tapioca starch everything else is pretty common to find. Let me know if you do try it. : )
Angel Wong's Kitchen I think I will try to find the ingredients. Unfortunately, I live in Florida and our Asian markets have very limited supply of everything. I wish I did have a taiwanese night market near me even though I'd gain lots of weight. 😁
Angel Wong's Kitchen I made it and it turned out great. My mom said that it reminded her off the one she used to eat in shilin night market.. Only the sauce was a little off. The sour plum powder made the sauce taste a little funny.

I think I'll have to make this! :-) I used to be able to walk out my front door on Haida Gwaii, get in the boat, and go pick *huge* fresh oysters off the rocks on an island just a couple of miles from home... but here in Vancouver, good fresh oysters are available almost all year 'round, and in the late Spring they're pretty cheap. Can I use corn starch instead of tapioca starch?
Unfortunately it has to be tapioca starch
Starches are different. The tapioca starch gives the omelette a gummy texture that cannot be reproduced with other starches.
I have tried it with corn starch. Doesn't work and wrecked the dish.

Yes, that's correct. It's not absolutely necessary to have it, but if you like the flavor, it does add to the dish. Enjoy!

The oyster omelette I grew up with in Singapore is a little different. No veggies or sauce. Your version is probably healthier.
