Hello! It seems the caramel was overcooked or was left in the pot too long (it keeps cooking even when the flame is turned off because the pot hasn't had a chance to cool down completely). Is there any substitute for cornstarch? Can I use glucomannan instead? Also what is the purpose of the vinegar in the sugar sauce as I've never heard of this before. Please let me know. I'm on keto but trying to also be dairy free and would love to make your version of flan.
Hello! Sorry I haven't tried this with glucomannan so I can't say for sure. The vinegar helps break down the sugars and keeps it from crystallising. You can omit it or replace with a bit of lemon juice if you don't have it :) If you do end up trying this with glucomannan I would love to know how it turns out! Good luck!!
Nope no need! When you leave it in the fridge overnight the custard weeps and liquidises the caramel so it’s nice and drippy and makes it easy to slip out
Hmm without agar it has a soft pudding consistency, if that’s what you prefer, but you’ll need to add a bit more cornstarch. Otherwise you can substitute the agar with carrageenan. Is there a reason you can’t use agar?
If I want to skip the agar and corn starch can I use the same amount of custard powder instead.? And can this be made with normal pasteurized milk too?

Yes according to non-vegans that have eaten it. Make sure you use top-quality soy or oat milk, and let the flan infuse in the caramelized sauce overnight in the fridge for best results.
I tried this and although it didn't taste like a traditional caramel custard because a traditional custard has a eggy flavour.. It was still so freaking good😍😍😍It looked gorgeous too.. I wanted to eat the whole thing by myself.. But i have siblings😒🤭
Plant milk means milk made from plants, like soy milk, coconut milk, almond or nut milk, etc. You can choose your preferred milk, but to keep it dairy-free and vegan, non-cows milk has to be used
It will be a lot sweeter because caramelizing sugar gives it a complex bittersweetness which straight maple syrup won't have, if that's what you like, go for it!!
I just made this using Kirkland's unsweetened almond milk and unfortunately, the flavor was off. I will try it again with another non-dairy milk and see how it goes.

Hello! Powdered sugar has too little starch content to be a replacement here, but if you don’t have cornstarch you can use custard powder

Hello! Most custard powder ingredients are mainly just corn starch and flavoring, so you will still need to add the agar powder to help it set

I don’t recommend gelatin in this it won’t turn out as nice and creamy with the same consistency. You can use carageenan in place of the agar though.
Also, gelatin is not vegan. If you're not vegan, non vegan flans can be tastier.

I suspect you may have overcooked the caramel, have a look in the description section for tips on how to prevent/ fix this

I made this with honey and coconut sugar, didn’t work so well. Next time I’ll use JUST coconut sugar for the caramel, and add more Agar.

I used soy but have been told by others it works with oat milk too, as long as it’s creamy and somewhat neutral it should do fine :)
