- How we have gone this long without sharing this classic recipe for Coffee & Walnut cake we don't quite know! But alas, here it is in all its perfectly simple glory; layers of coffee and walnut sponge filled and decorated with coffee buttercream and topped off with more walnuts. This is a perfect tea time cake and we guarantee you will absolutely love it.

Preheat Oven to 170C fan assisted (190C non fan)
For the 3 layer 7" cake that Sally makes in the video:
This quantity will also work for 2 x 8" sponge, see below for 6"
250g Softened Unsalted Butter
250g Caster Sugar
4 Eggs
250g Self Raising Flour
50g Chopped Walnuts
3tbsp cold good quality Espresso (or 1tbsp instant coffee granules mixed with 3tbsp water)
Coffee Buttercream:
250g softened Unsalted Butter
400g Icing Sugar
3-4 tbsp cold good quality Espresso (or 1tbsp instant coffee granules mixed with 4tbsp water)
Walnuts to decorate!

For 2 layers of 6" sponge:
125g Softened Unsalted Butter
125g Caster Sugar
2 Eggs
125g Self Raising Flour
25g Chopped Walnuts
1.5tbsp cold good quality Espresso (or 0.5tbsp instant coffee granules mixed with 1.5tbsp water)
Coffee Buttercream:
125g softened Unsalted Butter
200g Icing Sugar
1-2 tbsp cold good quality Espresso (or 1/2tbsp instant coffee granules mixed with 2tbsp water)

For anyone wondering, it's a Wilton 2D nozzle, 1M doesn't have that little inwards dip at the end but both are amazing!

Hi Sally. Finally a recipe that uses fresh espresso instead of espresso powder or jar coffee yay!
I made this at the weekend. I substituted the caster sugar for organic coconut sugar instead. And OMG it made for a more intense flavour 😋. Your recommendations for the amount of espresso in both the cake batter and buttercream frosting were spot on. My youngest child obviously doesn’t drink coffee but he loved the espresso based sponge! And a fellow friend who isn’t a coffee lover, said the sponge was delicious as the espresso wasn’t over powering. I posted my finished cake pics on Facebook and I was overwhelmed by the lovely comments I received, so I ended up doing a cake run delivering slices to friends! You’re so right about it being a classic cake. It’s just on another level because of the fresh espresso ☕️ used. Fabulous tuition video. Thanks Sally! 👏👏😀

One the local chateaux is owned by an lovely Australien woman who is fabulous baker. She makes a walnut coffee cake and I had never had it before. Now I have a recipe to make my own!

I just made this for the first time today. I personally don’t like coffee and walnut so I never buy or make that flavour cake but my brother in law asked for it for his birthday and I did a practice run. OMG it was delicious!! And I don’t even like those flavours!! Teaches me not to overlook classics, they’re classic for a reason. Just so yummy 😋

I have a video idea! When you get to the creaming method in a cake video, you always say “I’m using a stand mixer, but you can use an electric hand whisk, or you can use a bowl and a wooden spoon.” I think it would be fun to watch you all make a full on cake using the most basic (non-electric) tools. Trust me, I’m team stand mixer all the way and I love my stand mixer, but i would love to see you all do a cake without all of the fancy gadgets! Just an idea! Keep shining, Sally♥️
Fancy gadgets??? the stand mixer has been around since 1910, it's just a standerd piece of equipment. How about baking on an open fire instead of an oven?
They are a bakery. When you are baking multiple cakes I don’t think they have time for that
@@aksherasiddi9493 i said it’s a video idea, not a business idea. they make these videos for fun and for informational purposes. and most videos they are making one cake, not several. so i dont know how my comment came across as me saying that they should not use electronic tools to make big batches to sell. obviously why would they do that? lol
@@grantcunningham2452 When I'm at my dads I have to do it with the wooden spoon as no mixers there! Burns off the calories in preparation for cake eating later 😊

I doubled the recipe to make 4 8” cakes but it only made two layers. I was wondering if I’ve done something wrong or my layers are just thicker.

Hi! I love your channel and my morning routine is to grab a cup of coffee and watch a video, it´s really sets the mood for the day! And I have a problem, which is a small oven (two 7" tins are max capacity). Can I use tins with tall edges and divide the sponges in layers afterwards or is it better to bake in sessions instead? I´m afraid the batter will be too heavy and that it won't rise if there is too much in a tin...

Hi, you can substitute the flour with bobs red mill 1 to 1 gluten free flour and substitute the milk with any nut milk, thats what we do ☺️
