    INGREDIENTS:
    • 1/2 cup coconut oil, melted
    • 4 oz unsweetened chocolate

    • 3 eggs
    • 2 teaspoons vanilla extract
    • 1 tablespoon instant coffee, optional
    • 1/3 cup + 1 tablespoon coconut flour

    Hooray! Finally, I found a keeper! New to gf baking. I didn't have unsweetened chocolate, so I reduced the sugar by a 1/4 c, and added 1/2 tsp psyllium for bulk. I'm also pleased that this recipe doesn't have a 1/2 dz eggs in it. I did have to bake it longer than 25 min. 30 min was perfect. Ty!

    I added some sugar and some apple sauce and worked fantastic , thank you so much! I found coconut flour difficult to use after I bought it, now I know that at least it can all turn into brownies! :)

    The batter was delicious. I'm just waiting for them to bake and I'll try them tomorrow. I use powdered stevia which is super sweet so I may have to adjust the sweetener a little on the next batch because I also used 72% chocolate bits. I also added chopped pecans and almond extract to offset the sweetness. I hope they're good. 🤞

      I hope it turns out well for you. I am not familiar with powdered stevia. When I use drops its usually just 2-3 drops per servings. So I can see that you would need very little for the brownies

    I can’t eat coco but what if carob was mixed into coconut oil before mixing would that helps?

      Maybe? I don't have experience with carob powder but I know it is used in some alternative brownie recipes

    Im just looking for a recipe cuz I cant eat gluten anymore. So can I use regular white sugar? And can I also use olive oil instead of coconut?

      Yes white sugar will work. Light olive oil may be fine. But I believe extra virgin will have too strong a flavor. If you don't want to use coconut oil you can also use melted butter (if dairy is ok) or other mild tasting vegetable oil

      I have not tried this with liquid sweetener, but since brownies should be gooey anyway I think it would work. Be sure to use less than the sugar amount though. Because honey is denser, by volume it is sweeter than granulated sugar

    Made them yesterday, put into the fridge and tested today. They are delicious but I couldn’t help myself and added a little bit of baking soda in the butter and they came out okay little bit cakey but yet fantastic as if bought from a fancy bakery. If you could please explain how this works without baking powder and baking soda. I will try next time.

      Glad you like them! Baking powder and soda are leaving agents to raise and aerate the batter. This is not usually a texture we want with brownies. That lightness is was gives a cakey texture. Whereas brownies we usually like more dense and fudgy. Coconut flour already has a somewhat spongey texture, so I don't add a leavening agent to not encourage that aerated texture even more

      Yes you can use a different oil. I recommend a light or flavorless oil. With olive oil chose light olive oil to not overpower the flavor

      I am not familiar with Equal sweetener but if it has similar sweetness as sugar and is suitable for baking, then it should work just fine for these brownies

      Just add it dry. It will dissolve with the wet ingredients in the mix

    Great recipe, when I cut through it it was still a bit gooey and was sticking to the knife. Does it mean it's still raw?

      No not necessarily. Brownies are supposed to be gooey. Did you chill before cutting? Usually they should set enough in the fridge to be able to make clean cuts

    My pan is a bit larger than what you used here. Can I just double the recipe and bake it in my large pan and add some more minutes baking?

      Yes you can double the recipe for a larger pan. Or make thinner brownies (1 recipe) and bake for shorter amount of time

    First time I've seen a brownie mix without any cocoa powder, is it cos the amount of chocolate used.? Also any tips to make these more a protein brownie with my whey protein powder? Thanks

      Yes since there is baking chocolate in here, it gives the brownies a rich deep chocolate flavor. Coconut flour baked goods can easily be dry, for that reason I am not using cocoa powder for these brownies as that could make them even drier. You could try replacing some of the coconut flour with protein powder.

      Flax or chia egg substitute may work here though I haven't tried. But since brownies have a dense, fudgy texture anyway I think this should work

      You can but I found the texture was better, more fudgy, with melted chocolate. My almond flour brownie recipe is very similar. There I use 1/2 cup cocoa powder instead of chocolate. You can see it here ruclips.net/video/6-xp-itKBtk/видео.html

      You can try with 1/2 cup of cocoa powder. They won't be quite as fudgy. I find that with coconut flour (which can be very drying) melted chocolate really gives the best brownie texture

      It depends what form your stevia is in. I don't think stevia drops will work, since the recipe depends on the bulk of the sweetener in order to work

    What if I obly have unsweetened hershey cocoa powder? What will be the measurements?

      I use 1/2 cup cocoa powder in other brownie recipes of this size. Though I am not sure how the powder will interact with the coconut flour. The batter may be too dry. I would start with 1/4 cup of coconut flour and then slowly add more only if needed.

      You can try. Usually flax egg makes denser baked goods. We don't want fluffy brownies anyway, so I think it may work fine here

      I recommend a light flavored or neutral oil. Light olive oil can work (extra virgin will be too strong) or avocado or vegetable oil. Also melted butter

      I am not using any because I want the brownies to be rich and fudgy. With a leavening agent there is a risk of ending up with a fluffy, cake-like texture. Of course you could always add a little (1/2-1 teaspoon) if you think you will prefer them that way

      I just put them in the oven and I’m waiting for them to be done. The consistency and color looks so different from yours so I’m worried they won’t turn out 😧 the only ingredient that was different from yours was that I used granulated stevia so I can’t imagine what I did wrong. They might be fine. I’ll update when they’re done! 🤞

      Not needed in brownie recipes. The goal is a dense fudgy texture. Not fluffy chocolate cake

    the first recipe says 1/4 teaspoon, but your list states 1/2 teaspoon? which one is guaranteed to give good brownies?

      Thanks for noticing. I didn't realize but I misspoke on the video. It is 1/2 teaspoon of sea salt. Nothing wrong if only 1/4 tsp is used. And if using table salt which has smaller granules, 1/4 tsp is better actually.

    How many cups is 4 ounces of chocolate? I Googled it. Some says 1/2 cup, others say 3/4 cup. Im confused.n

      That is because you are converting a weight measurement to a volume measurement. So it depends on the shape your chocolate is in. If using regular sized chocolate chips (not minis not chunks) it's about 3/4 cup. I usually use an unsweetened baking chocolate bar where each square is labeled as 1/4 oz. and the whole bar is 8 oz. So I know I need 16 square or half of the package.

      Yes I think for brownies liquid sweetener should work well. Use about half the amount though for similar sweetness levels

    Brownies made. Very good flavor but next time less coffee powder and less sweetener. You guys in America use too much sugar and when you substitute you have a tendency to use too much sweetener too. But otherwise it’s very good. Greetings from Italy 🇮🇹

      Greetings back from a German living in Mexico 😁 but you are right the brownies are based on an American recipe and taste buds. And I agree that when using sweetener even if it says it’s a 1:1 replacement I often find that I need less of it. Thanks for watching and making my recipe.

      I am sorry to hear. Did you try coconut flour in any other recipes? Did they also have that sharp flavor you didn't like? What sweetener did you use? Some alternative sweeteners can have an unpleasant aftertaste

    I made these today and used 90% chocolate and erythritol instead of sugar. 250g erythritol is way too much.

      Sorry to hear it didn't work out as expected for you. To be honest, I have no experience with pure erythritol and how it compares to granulated sugar. I usually use Lakanto sweetener with monkfruit + erythritol that has a 1:1 conversion ratio

      I also like weighing my ingredients. Growing up in Europe, kitchen scales are a normal thing. However, most of my readers/viewers are in the US and are used to cups, so I am providing that as the main unit.     I tried it today for the first time and it’s really excellent but with butter instead I didn’t have coconut oil and I took your advice I used Lindt dark chocolate 99% amaaaazing. I ate one piece but I needed more 😢 but impossible. It’s healthy buttt you know if I eat 3 or 4 pieces it’s not gonna be healthy anymore 🫣
