This is actually done with a PIC microcontroller. It just has Arduino headers for convenience if you want to use an Arduino to control it over the SPI bus.
You can see in the video that the outputs of the board are connected to servo-motors. There is nothing that would stop you from connecting them to an arduino-input or something, and then send display-data to a display based on these inputs.
So this could easily be used to control the servos in a Rc lowrider with 4 servos? Sounds dumb but it it plug n play without any programming or coding?
I have been trying to figure out if I can connect a ps4 controller with only a nano 33 ble/iot only... think that can be done? Its for a micro rc car. This setup is to big to work.
It can be done, there are tutorials online that might help. However, you have to use the bluetooth pairing method instead of the USB pairing method that I used because the Nano33 doesn't have a usb host capability.

Sorry, I only know how to use PS4 controller. However, there are plenty of resources online that will teach you how to use XBox360 controller

What MCU did you use? I'm looking to connect a DS4 to an ESP32 which has a built in Bluetooth module, I'm curious if it is similar.

Quite short. 10-20 meters, although you can hook it up to an XJT radio transmitter which works for some applications.
