      That's a precisation cut .it's normal to have a waste it needs to have the same size to cook at the same time.

      Those are not wastes, those trimmings can be used for vegetable stock.

    For veg we use brown shopping board, the white is for diary product please respect hygiene regulation this is insult for any chef watching you.

      For cooked chicken we can use brown chopping board or some cases we can use white chopping board as well .
      If we are using only cooked meat

      @@chefhemanta is really shame for someone wearing white chef and he doesn't know the basic of hygiene,you are lucky that you are not operating your business in UK, otherwise you could have hefty fine and you loose at least 2/3 stars from your food hygiene trade business. Here is the code of shopping boards
      1-brown for veg
      2-green for salad/fruit
      3-yellow for cooked meat
      4-red for raw meat
      5-bleu for seafood
      6-white for sweat& baking products
      7-purple for allergens.
      Hope this will help you understand the basic uk hygiene regulation.
