If you want to eat good fish in Norther Portugal, go to Matosinhos (adjacent to Porto) or Vila do Conde (you can take the metro). Matosinhos has the best fish in Portugal.
Porto is nice but it's a big city. I'm currently in Portugal visiting my wife's mom and dad in Northern Portugal We are in Ponte de Barca which is only 1.15 minute drive from Porto. It's a quiet town and also close to Braga and Ponte de Lima. The Spanish Border is a little over an hour east. Baiona, and Vigo Spain are also very close. Check it out.
Of course I would visit the three places you guys are going to, but I would also like to stay for a while in Caminha, just south of the Spanish border. We passed through there on our way to Lisbon last Sept.

Absolutely! The whole of Portugal is sunny and warm in summer. I'll definitely get up to see those towns but you might get there before me! If you do let me know how you enjoyed them.

In 2018 made a brief visit to Cascais, Monte Estoril, Lisbon and finally made it to Algarve. Relying on the train, I visited towns from Faro to Lagos. I wanted to fall in love with a town - but not yet. I would like to move to Europe: Portugal, Spain or Italy - just need to find the place that resonates with me and preferably livable without a car. (Have lived years in NYC without a car).
Would visit Guimaraes, Aveiro and Vigo, Spain (is that cheating?) or Tomar (is that northern PT?) simply because I've heard a lot about these places but haven't been. Have visited Porto, Braga and Coimbra. Need to return since our previous trip was too fast and not enough time to really get the true sense of (potential) "living" in these areas. BTW--Nice car. Did you upgrade? 👍
Tomar is central Portugal, a calm city, with lots of history. In reality, Tomar is very close to the center point of Portugal (which is 2 km away from Vila de Rei).
When we went to Porto I had to ask about the line at that bookstore...I had no idea! Well, in Porto style when I inquired about what the line was about, the doorman responded,"it's the most beautiful bookstore in the world"!! I, like you, did not wait in line and went off into the park!!

Living without a car is only really feasible in a big city (in my personal view).
