I do say "I don't know" but only sarcastically. After 20+ years running gaining tables, I've become a master of improv.
Reminds me investigation/insight/etc checks. If someone rolls Perception to look for traps, don't say "There aren't any traps." Instead say "You don't see any." Sometimes that's because there are no traps. Sometimes it's because you didn't notice.

Feel free to branch out. Like you said, now is a reasonable time to do so. It's better to be working on various stuff you like than burn out on a limited sphere. Besides, the D&D-style content is adjacent to so many other forms of entertainment - audiences can overlap.
