    2-3 medium yellow onions
    5-6 cups beef stock
    1/2 cup red wine (optional)
    1 sprig of thyme
    1 whole bay leaf
    1 tbsp sherry vinegar
    Gruyere cheese
    Sourdough bread
    salt & pepper to taste

    Each recipe is its own art. Even just adding olive oil, crushed black pepper and salt seems so cool! Very well shot and the recipes are actually informative. You go Glen Coco!

      When I cook with sherry, a splash to me is enough to coat the bottom of the pan when frying something, or a splash in sauces means enough to change color slightly. When cooking, the alcohol burns off naturally in heat, and the flavor is left behind. Like a whiskey broiled steak.

    i love ow you simplify complex recipes for most people, other chefs like it super grand. thanks for sharing your knowledge. i could not afford most of the ingredients but with your recipe i can make great recipes but it doesn't cost as much. THANK YOU

    I made this for the first time in my life in my basic cooking techniques class. Crazy how simple it is. Instead of deglazing our pan with water, we just used beef stock. Swiss cheese was a good replacement for us. It melted nicely.

    Hey Byron. I know that beef stock is used in typical french onion soup, but could you use vegetable soup and get the same effect?

      Of course! When you're making the veggie stock, just make sure to brown the veggies before adding liquid. It'll make a wonderful dark veggie stock that'll work perfectly with a vegetarian french onion soup. ;)

      Actually, there is no beef broth in a traditional french onion soup. Traditionally it is made with multiple deglazings with flat champagne or white wine and then water. It's a process that takes several hours so beef broth is used to replace richness the multiple deglazings impart, allowing the onions to be deglazed only once or twice. That said, use mushroom broth to replace the beef if you are vegetarian.

      for a great veggie stock, use brown onions, garlic, skin and all...I am a culinary student and we make our stock in the restaurant at school like this. it adds so much more flavor. we also add celery, carrots, turnips and lots of fresh herbs

    I really like this filming style. it has just a little more variety of transitions, and I like the shots of the food close ups. Watching the broth bubble for just a couple seconds was gorgeous

    I'm totally intimidated by cooking, even simple recipes. This video explains how to make the soup so easy with each step explained.. I had the video on while I made it and paused it at each step. This came out so good and tasted incredible. Thank you for a great video.

    My detour: In the base sautéed Indian cottage cheese was added, which gave a strong texture to the soup; added water worked as a broth, so needless to say no external broth was added, as I see most have high degree of sodium. I did add sea salt. Before sending the soup in the oven for crunchiness roasted foxnut was used, mainly to substitute bread.

    I believe this IS incredible. First time I tried onion soup was in a Dutch restaurant on Crete (yup, complicated) and since then I've been a huuuuge fan. I would prefer white wine to red wine, however, 'cause I can't stand red wine in dishes since early months of my pregnancy X) Guess it's going to be as goos as Byron's version.

    I've just tried this recipe, however I couldn't get some ingredients. I had to substitute beef stock for chicken stock, red wine for white wine and sherry vinegar for honey vinegar. Nonetheless, it tasted quite nice. Though, I could imagine it would taste better with some beef stock.

    Damn, I definitely want to try this out.
    by the way, a cheat for the toasted bun he made would be using a rusk out of a package instead of slicing up a bun. it's already round in shape, and very crispy, making it a great substitute. :D

    Great dish Byron! If I were to leave out the cheese at the end, would I still need to pop the soup + crouton in the oven?
