    Chicken 65 is a spicy, red, deep fried chicken chunks usually served as bar snack, entrée or quick appetizer accompanied by onion slices, slit green chilies and lemon wedges.

    Ingredients
    1/2 tsp Aji no moto(MSG)
    2 lbs Chicken-dark meat(boneless thigh meat)
    1/2 bunch Coriander leaves-chopped
    2 tsp Cornflour
    1/2 tsp each tsp Cumin seeds, Pepper powder,chilli powder,salt
    4-5 number Curry Leaves-chopped
    1 number Egg
    1 tsp Garlic-chopped
    1/2 tsp Ginger-chopped
    2 tsp Ginger/Garlic paste
    4-5 number Green Chilli
    to fry Oil
    2-3Drops Red color(Optional)
    Directions
    • To make the fried chicken pieces:- Take chicken pieces in a non reactive bowl-(We use dark meat so that it is nice and juicy when fried).Add salt, Aji-no-moto,1 tsp ginger/garlic paste, pepper powder-pinch, cornflour and mix-Then add 1 egg and mix in completely-(Egg coats the meat and keeps the juices in) Heat oil in a frying wok or kadhai-Add chicken pieces few at a time(Do not crowd the kadhai) and fry until lightly golden brown-Drain and remove on a paper towel To make the sauce:-This does not need to be very salty-so control salt Heat 2-3 tsp oil in a pan-Add cumin, add the chopped ginger and garlic and suate until fragrant-Add chopped chillies, curry leaves,1 tsp ginger/garlic paste, remaining pepper powder, chilli powder, salt,chilli/garlic paste, aji-no-moto, red color and mix-Cook for a few minutesAdd a little water and then add chicken to this paste and toss lightly-Stir in the coriander leaves and serve

    Since I saw this new version of making chicken65, I never turned back to the old recipe . I never used egg and aginomoto even though it comes out superb . I want to thank chef for this easy recipe. Chef you are very good human being ,it reflects in your talk and in your recipes.and I enjoyed both !

    Its ausome recipe...ur gr8 chef.. Its the same taste which I use to have when I was in maharashtra doing my bachelor's. Now with ur given recipe my wife she cook the same chicken 65... it ausome... even my friends they tasted n now they r big fan of this recipe...

    i made this today and my husband loved it! I skipped on the MSG and added a little food colouring this time but probably will skip that too next time. Just a tip: it was slightly salty so make sure you check your salt as you go. Thanks for a great recipe!

    My father in law Shaun D’Cruz was from Chennai India he passed 10ish yrs ago …This was my favorite dish he exposed us too. Miss him so much. With his chicken 65. And his Chicken biryani and rose cookies and coconut sweets. And his curry going to make this for my sis. And her family this week. Thanks for sharing

    I just tried this dish and it came out very well. Although, I had already marinated the chicken with yogurt, chilli powder, lemon juice, cumin powder and pepper to make another dish. Even though, I followed your recipe and it came out very good. Thank you and I like the way you present you show with such liveliness. Hats off!

    Best recipe ever. Instead of ajimomoto I added 1/2 teaspoon of sazon goya and it literally tasted like Indo-Chinese street food.

    Origin of the name comes from the year 1965 it was invented at Buhari restaurant in Chennai, so they kept the name Ckn 65. Watch the Buhari Ckn 65 video in RUclips and the owner explains the name.

    Dear Chef Sanjay! I love your Recipes as well as your style of talking... I tried some of them already, It comes out good. But dear brother I have a very strong objection about your recipes.You don't say or show us the exact amount of ingredients. You know when you don't let us note the amount of ingredients, then its not really call recipe!!!!!!!!!!!!
    I don't want to compare you with others, but you know very well who shows us exact amount of ingredients, written, repeat at the end of cooking, most of all- doesn't talk about unnecessary things. Please do something about that. Thank you very much,Zohir From Dhaka

      Dear Zohirur - If Vah Chef was to directly go the recipes without indulging in history and occasional tips... He would be a "Sadha" chef and not Vah Chef.
      I am from Chennai and I know what chicken 65 is so I might try it. Why would anyone who has no idea what Chicken 65 want to try it - That is when the intro kicks in. Chef tells you in this episode the reason behind adding the egg - So next time you cook something on your own and you want to retain the moisture - You know what exactly to do to improvise. This is what is expected out of teaching. Everything else just means showing.
      I meant no offence but I was taken aback when you said chef is telling "unnecessary things".
      Telling the exact amount is not required because of differences especially on a global scale - The green chilli we get in India might be 4 times hot than the green chillies we get in Sweden. TATA salt is defintely saltier than the Nezo fine salt I am using. Chinese garlic pods are three times in size than the Indian pods. So what I do is watch the video, capture the essence and play along - Sometimes I think that I get better results than the chef in terms of color and texture. Partly is luck, partly is hitting with the quantity and quality of stuff.

    Hi Chef, Thanks for your recipe.
    Ajino moto is not good for health. It is also called as the CHINESE TASTING SALT. Chemically, it is MSG or Mono Sodium Glutamate. You can do a google on this for the dangers of this ajino moto.
    The red colour is also a chemical, sometimes or rather most of the times, it is toxic. What purpose does it serve? Just gives colour, nothing more.
    We can easily avoid both these, so that it is healthy when cooked at home. At HOTELS & RESTAURANTS, they have to attract & impress the customers, so they add these. At home , these are ABSOLUTELY NOT NECESSARY. The natural colour is enough. In some restaurants, the colour does not wash from the hands even after using the soap. So, just imagine what it could do for the stomach and our health.
    If you add these disclaimers, it will help your viewers who may think that these are essential ingredients for making Chicken 65. Let us dishes be natural. Thanks.

      There's nothing wrong with msg, it is a naturally occuring substance in many foods such as tomatoes and mushrooms.       MSG is not as bad as people think it is. Salt is very bad too. MSG is like salt. It is ok to use once in a while. Besides nobody lives forever. Must enjoy life. I do agree with not using food color. Thank you.

      I am in Chennai and I have tasted almost everywhere buhari thalapakatti and every other famous restaurants they just fry and give it. If this tastes good for you, then try hyderabadi version.

    You are good but a few comments. Good chefs don't use Ajinomoto or even worse, food color, And the way you are using the wooden ladle to add the spices, or pouring them right from the bowl, it's very unprofessional. Besides you' sound quite exaggerating! Hope you'll improve on these. Thanks.

      Every great restaurant in the world uses MSG and food coloring. You have no clue what "good chefs" use or don't use. Do you think good chefs measure every ingredient with measuring spoons? Only ignorant beginners like yourself do that. Instead of critiquing why don't you shut your mouth and listen. Maybe you will learn something.
      Also, work on your English before criticizing others.

    Who needs 65 different spices when we have a great teacher like you! This recipe worked out on our very first try. I cooked it for multiple potlucks and it was a sure hit even among Americans. Off course I had to tone down the red chili sauce a bit! :) Even my boss likes it! Thank you so much!

    Brother! I am 27 married and living in Dubai. The first dish i prepared in my life is the Chicken 65 you posted! You made me enter the Kitchen only cos your video was so inspiring!     Vah Chef,
    I ordered the Ajinamoto which i didnt have and made this dish just minutes after viewing your video a few hours back. Its turned out awesome and I added more chopped garlic and thin rounds of green chillies and made my own red chilli with garlic sause. Thank you so much.

    Dear Sanjay, I tried ur recipe yesterday.... IT WAS AWESOME... My husband loved it so much that he ended it with the starter itself... and I followed exactly the same style...the red chilly -garlic I had some other Chinese brand... but it was super.... pls post more recipes... thank u so much....

    I cooked Chicken 65 last weekend for my wife, 10 year old daughter and 5 year old Son. Its’ look like restaurant style, (except ajinamoto)

    Cheryl From New Jersey Here,
    Tonight I tried the Chicken 65 except that I used shrimp.
    The shrimp soaked in salted water for 1 hour then, drained.
    The shrimp did not take well to the same method of coating as the chicken so, next time I will simply add to the shrimp 1 slightly beaten egg white, dust in cornstarch then, deep fry.
    I believe the result will be very crispy shrimp whereas the coating used for the chicken was not the best result.
    Beside that, this dish was absolutely delicious!
