Hate to break this to you but Flour beef enchiladas are not a new recipe, at least not in western US! We make this when we want change from traditional enchiladas. When I was young, we used to get these in our school cafeteria lunch. A good authentic sauce, plenty of seasoned beef and cheese topped with cheese and sauce and baked… yum. Serve with real Mexican rice (not white)and green salad. Instead of canned refried, Try making a pot of pinto beans, season and cut up some bacon and about 10 minutes before fully soft, throw in some cilantro. Freeze them, pour into storage bags and use as needed. Mash with a little water for refried. My mother always refried with a little lard which was the traditional Mexican way I remember, but I use water.
