This is another good one for me all those meals that you made sound good to me and would be similar to things we normally make so we would have what you needed to make them with but put together a little differently which basically makes for a different meal. Thanks I'm enjoying these.
@A Country Life. @Jennifer Brockman I do not think you can ruin these no matter how you try. I've made these countless times over the past few years almost like the recipe, subbing homemade refried beans for canned. Made them for supper tonight and "I followed the recipe exactly, except ..." LOL How many times we have heard that? So mine looked almost like yours, sorta. I forgot the cheese and olives on top so they were plain, but I put the enchilada over top instead of inside so they still looked good. I'm allergic to rice so subbed quinoa - gives a little bit similar texture, sorta. Didn't have ground beef so I used a shredded taco meat I had canned. It had too many onions, but was edible. Not doing that again unless I have to. I think that's it. Oh used parmesan (Shakey kind) to deal with the weird taste of that taco mixture. Added green onion to serve. Still delicious in spite of my best efforts to destroy them.
