    That's a beautiful grill! I've been thinking of getting one of these for this exact reason for some time now. Just expensive for what it is. But the cheapest way of true cold smoking that I have seen yet. Hope the cheese tasted good. Thanks for the post.

    I've been using the four channel smoker with pellets for years. With two channels filled it smokes for 6 to 8 hours. I buy slab bacon and re smoke it with fantastic results. I also leave the smoker door slightly open for first 20 minutes to make sure it'll stay lit.

    Here is a good tip people. If you have access to wood pellets, you can simply make saw dust out of them. Put some in a cup and soak them in some hot water. They will turn back to saw dust. Drain and dry them out in an oven on low heat.

    I would like one, I would cold smoke my turkeys for about 2 + days than bake them in baking bags.. I live in a cold climate .

    I think you can just use a simple utensil caddy from Walmart, snip each end with a wire cutter, drill a hole at the end viola!...and it will cost you about $10 to $15. You can then buy your own wood chips and shred them yourselves. No need to buy proprietary shredded wood when you can do it yourself and save money.

      It is totally worth the extra money to buy it from them, it is high tensile stainless steel and welded supports on the bottom to keep from warping. I smoked a brisket for 14 hrs and didn't have to touch it once, I used standard pellet mix, (Don't have to use saw dust) of apple and Cherry, that I purchased from a warehouse store in 25# bags for $17. enough for a years worth of smoking! Im a penny pinching do it yourself dude as well, but after using this for about 4 months, I can tell you it is well worth the money.

    What temperature did your BBQ/Smoker go up to with the A-Maze-N-Smoker ? If cold smoking salmon, the ideal cooking temp is 70-100 degrees.

    For some reason mine will not stay lit.using their wood cores. one end or both ends. It will smoke for a min then it quits. I wonder if tipping it up would improve its function?

      Use pellets. I use the pellets and it smokes for 12 hours straight.

      You could also try microwaving your pellets first. This drives off all moisture that the pellets take up from exposure to the air.

    medhist2006, I am having the same problem, burns a couple minutes and goes out, relight it burns a couple minutes and it's out. I finally made a pellet holder out of aluminum foil. A couple cents of Aluminum foil and it works a heck of a lot of better, light it once and it stayed burning, and you can use any ones pellets. I think we wasted thirty bucks for a piece of hype. I am putting this warning out on every site I can, DO NOT WASTE YOUR MONEY ON THE A-MAZ-N-SMOKER !!!!!!!!!!
