I hope you are not talking about lucas. Lucas is great and genuine. But that one guy with glasses and crappy suits is annoying as fuck.
I really like the fact that he sources from his community and creates his food based around local ingredients to create a meal that is not only Vietnamese but also Hawaiian.
But its not Hawaiian, it is local. There is a difference.

Wow Andrew’s family story, and philosophy on cooking had me kind of tearing up. That was beautiful, hearing what cooking means to him. Very moving. Visiting Hawaii next week, and if you see a man crying into his bowl of noodles, that just might be me 🤣
there was something calming about this episode! it was really good! both spoke well and very naturally.... it wasnt like 'lets say this because the camera is there' ... it was legit like watching your two friends have a chat lol it was nice! thanks!

On this video you just made Mr.Simeon and the conversation you were having was really deep and true to the islands. This generation today is missing that totally. I grew up in Oahu, Kalihi to be exact my whole life was growing up in low income housing and we learned to live off the Aina our neighbors would share with everyone what we caught at the beach, hunting etc...Today this generation is sad really sad. Great videos keep up the good work, aloha brahdah Simeon.

One of my best top chefs at one of the best top restaurants in Hawaii.
My dad was a merchant marine and during a trans-Pacific trips in the 70's he had a heart attack. He was medevac to Honolulu to that great big pink hospital (Tripler Hospital) where he had a triple bypass. I was really young at the time but my whole family at the time went to Honolulu. It was sorta weird because we visited dad in the morning, eat breakfast at the cafeteria, and went site seeing in the afternoon.
Video grows on you, quite refreshing for some reason :) Hope he gets more videos and refines it some more :)

It's derived from all the different ethnic groups that came to the islands to work the plantations along with the indigenous Hawaiian people trying to communicate. Basically it's the broken English of each ethnic group combined and it created a language all its own. If you listen to the older generation talk, you can hear words from Japanese, Korean, Chinese, Hawaiian, Portuguese, Puerto Rican, Filipino all used as they "talk story" as we say in Hawaii. Look up Andy Bumatai on RUclips. He's a local comedian that talks pidgin. You'll find it interesting.

My husband and I just made dinner reservation at the pig and the lady but after watching this video I am having second thoughts about eating at a restaurant (knowing my health codes for food establishments) where the chef would allow someone to take the spoon that the person just drank from back into the ladle and the pot. It's very unsanitary. Hope this is not the norm. I'm a major foodie and quite a picky one. Plus following sanitary cooking practice for the public is very important.

What I saw was that Andrew Le ladled the broth he wanted Sheldon to test taste . It was another spoon that was dunked in the last vat .
