While this could be interpreted that something changed, I think that "Something" is a reference to the abomination on screen, implying that it "changed" in some way.
At 2:24, we can hear "consume", which could mean two different things:
1. The player/viewer/whatever chose to consume. (viewing it only as "consume")
2. The being chose to consume YOU (viewing it as the whole; "something consume")
I personally believe the second version, as it would make the being add your existence to the mix, making it change.
But that's only my theory, no one has to agree with this. I don't know anything about HELP_tale, so this is probably just stupid.

do y'all remember HELP_TALE .lua Undertale battle files? Well when you beat or spare one of them, you get the interactive cutscene where you need to touch the dark soul to separate all the souls. Then the cutscene starts where the text "*But something changed." appears everywhere at the dark screen until the loud sound starts, and battle file closes itself.
