tested it , keeping in fridge before baking for 2 days is more important for the fudgy-ness to develop... the flash freezing increases the density

The 100 hour sounds like a gourmet experience. The 1 day seems like something store bought. Every day is a celebration 🎊 100 hour all week.

I agree, you can take cleaning too far. I don’t have the time to be scrubbing the bottom of my pots. They’re clean. Just stained exactly how they should be.

In Canada butter is most commonly packed in 1 big block lol. She mentioned that she made her own sticks for a recipe in a different baking video.
You can get it in sticks or in a block (a block is 4 sticks together and the wrapper has measurements so you know where to cut for 1tbsp, 1/4c, 1/2c, 1c. Blocks are more common but you can get it in sticks too, it’s just a little more expensive and more waste.
I hate the measurement stick for butter. In Canada most butter is in one pound blocks, a stick is not a unit of measurement. It is like when a recipe calls for a bag or a can of something, be precise.
k333999 Smith 1 stick is 1/2 cup. There are 4 sticks in one block of butter so if you look at the measurement on the butter wrapper you can see there’s 2 cups in the whole brick. So 1/4 of that is 1/2 cup 😊

Just a fun fact for anyone who loves baking - there is a group on facebook called “vanilla bean co-op” and its just that. A co-op for vanilla beans. I make my own extract and with patience get beautiful grade a vanilla beans for around $10/ounce.

Rachel, hold the sifter (with the rim) 2 inches above the bowl and bounce the rim against the palm of your hand. It's faster and makes less of a mess.

I have the same pans!!! The bottom isn't actually dirty (like if you just didn't wash it in the sink) but actually discolouration from oil and the metal. Completely food-safe, and not a big deal. You don't have to scrub at it until it comes up!!! Just leave it alone and was pans as normal. Those pans are amazing, the only ones I use.

I truly appreciate that Chris doesn't like the edges and hates cakey brownies. 100 hour brownies are the special occasion only brownies, its just so much work and waiting 4 days for a brownie is a struggle.
I read the first LOTR for the first time a few months ago. I would like to join the book club, if spoilers will be avoided. I'd prefer Discord.
10000000% into a LOTR book club! I think Discord would be the best place to host it, since it would probably make open discussion easier than RUclips. Plus, we could have different channels for different topics related to the books (and maybe even a couple of voice channels for people who would like to nerd out aloud).
My only additional recommendation would be to have a "new to Discord" channel or something that explains what the different options/regions of the dashboard are, or explaining roles and permissions for people who haven't used discord before. When I was new, navigation was a little tricky, and it definitely would have helped to have something to regularly refer to (the built-in tour was a little clunky from what I remember).

(mix baking soda and a thick dish soap “I use dawn” then clean the pan with that it also works for stains on counter tops and mildew lines ) it should be a 2 parts soda and 1 part soap so 2:1

I have 3 batches of 2 day cookies going and a 100 hour brownie as we speak. I say this to point out I’ve browned butter a couple times in the last couple days and you don’t have to keep stirring ( I cooked mine on low medium heat { around 3 to 4 on the stove dial }). Use a steel pan so you can see the color clearly and when the butter stops making noice and started to foam when you stir it you’re almost there. Now depending how much heat your stove top retains after turning it off and also your pots I’ll be affect how much further the butter is cooked. I found that sliding the pot over to the other side of the stove was good enough to have it finish and not burn or over darken with isn’t necessarily a bad thing
