I like that u actually did the lap time for hai kee. I believe haikee is the one i have been looking for since the last time i ate his ckt in 2005. Back then the place was run down and he started at 6pm. Queue was long before 6pm. I remember the stall was very old school no glass shelf, only the countertop and a wok inside. I did not remember the name of the stall that time and i only remember the hawker centre was very very old and filthy. Now that i saw this clip, i showed it to my partner who ate with me that day, and he confirmed this is the one i have been looking for. I guess im looking for a memory of the filthy run down hawker atmosphere with the dusk nearing but a stall just only started opening
Finally Hai Kee.... watching the uncle (or with the aunty) operate, is quite intriguing. The meticulous focus to get each plate spot on, is quite a scene.
I first ate Hai Kee when I was 8 - 9 yo and now I am 61 😂 Back then Hai Kee stall was at the center stretch at 2nd level of Margaret Drive Hawker Center. He moved down to level 1 much later and sell only in the evening. Love his CKT!
I remember a char kway teow stall at level 1. Very dramatic when he cooked. He’ll throw the egg shells against the wall and itll slide down into a well-placed dust(shell) bin. Wonder if its the same guy. Some 25 years ago. Damn! Im old!
Hi Alderic, please try Fen Xiang Fried Kway Teow from Eunos hawker centre. Uncle opens from tue to sat 9am till sold out which is usually around 10.30am.
@@Alderic.Yes but the egg seller tells me they just check and sort accordingly - can sell for slightly higher price. The check is easy, just shine a strong torchlight through each egg!
Did I hear another 2 in 1 video? Such luxury Hmm egg on ckt? What if instead of sunny side up you put runny scrambled egg I can already see Alderic's version has lots of lard, cockles, maybe somehow got duck egg with mantis shrimp and topped with runny scrambled eggs
You are right. There is nothing more powerful than being reminded of that taste. There's an OG wanton mee hawker, that used to have to run when the police came 🤣, that also reminds me of that taste.
Personally, I really enjoyed hai yan even though they don’t serve with cockles. Lots of texture and flavour, the only version without cockles that I’ll reorder. There’s another yellow themed ckt stall in Telok Blangah that prides itself in its generous cockle servings but no amount of cockles can cover its mediocrity.
Agree with this i have hai yan at least 10 times a year. Always fantastic. I mostly get the beehoon though! I dont really see it as competition to ckt. More likely to bring it to a battle with economical beehoon. Like a secret skill in a cage match. To me, its the best breakfast beehoon you can get. Ill gladly give up a chicken wing or luncheon meat for the wok hei and the freshly fried sunny side up. (Anyways ive only ever eaten one double yolk in my life. And it was indeed, at haiyan. But just that once. I agree with alderic that its probably luck. I find it ridonkulous that you can buy double yolks from a supplier.

I'm still not sure how it works. isn't double yolk supposed to be a luck thing? seems more plausible that it's just 2 eggs fried together.

I went to Hai Yan last Sunday and today. Twice, none of the plates I’ve seen have double yolks though
When you buy those really big eggs that look a bit elongated, there’s a good chance it’s double yolk. Had the same experience at hai yan too
