Homemade Minced Meat Pide Recipe: Step by Step

Today, I will share with you the recipe for minced meat cracked pita, one of the indispensable flavors of traditional Turkish cuisine, which you will not want to buy ready-made anymore. This recipe, with its soft dough and delicious minced meat filling, will brighten up your tables. So, how can you make this delicious flavor at home? Here is the step-by-step minced cracked pita recipe and tips!
    Minced Cracked Pita Recipe from Elif's Kitchen
    Ingredients:
    2 cups of lukewarm water (400 grams) (0.8818 lbs)
    1 tablespoon granulated sugar (22 grams) (0.0485 lbs)
    1 packet of instant yeast (10 grams) (0.0220 lbs)
    Half a cup of liquid oil (45 grams) (0.0992 lbs)
    About 5.5 cups of flour (550 grams) (1.2125 lbs)
    1 teaspoon of salt (9 grams) (0.0198 lbs)
    400 grams of medium-fat ground beef
    1 small onion, finely chopped
    1-2 small green peppers, finely chopped
    1 small size red bell pepper, finely chopped
    2 medium-sized tomatoes, peeled and finely chopped
    1 teaspoon of salt (9 grams) (0.0198 lbs)
    Half a teaspoon of black pepper (1 gram) (0.0022 lbs)
    1 teaspoon of red pepper flakes (1 gram) (0.0022 lbs)
    Optional quarter cup of water
    2 egg yolks (for the top)
    Instructions:
    Place the lukewarm water in the mixing bowl. Add the sugar and yeast and mix. Then add the liquid oil and mix again.
    First, add 4 cups of flour, sprinkle the salt on top, and continue mixing while gradually adding the remaining flour. Knead until you get a soft dough that slightly sticks to your hand.
    After kneading the dough thoroughly, cover it and leave it to ferment in a warm place for about 45 minutes.
    While the dough is fermenting, prepare the filling: Put the ground beef, chopped onion, peppers, tomatoes, salt, black pepper, and chili flakes into a mixing bowl and knead until well combined. If the mixture seems too dry, add a little water.
    After the dough has fermented, release its gas and transfer it to a floured counter. The dough should be soft in texture.
    Again sprinkle some flour and divide the dough into pieces (14 equal parts).
    Roll out and place them on a floured baking tray. Cover with a plastic bag to prevent drying out.
    At this stage, you can immediately roll out the dough pieces.
    Spread some flour on the counter and open each piece of dough into an oval shape with the help of a rolling pin.
    Spread a few spoonfuls of the filling on the dough, as seen in the video, and spread it over the dough.
    Then, as seen in the video, close it up.
    Make sure it is tightly closed, press down lightly with your hand to shape it.
    Place them spaced apart on a baking tray lined with parchment paper.
    Continue shaping all the pitas until a tray is full.
    As you can see, a baking tray fits 5 pitas.
    Apply two egg yolks on top of the pitas.
    Put the ready pitas into the oven without waiting.
    Bake in a preheated oven at 180-190 degrees, with top and bottom heat, until the tops are browned, about 20-25 minutes.
    Take the beautifully browned pitas out of the oven.
    As you can see, this recipe yields a large amount of pita, with four more still baking in the oven.
    The nutritious, soft, and very delicious cracked pita is ready to serve.
