I'll be honest, when I first heard the song, I didn't immediately fall in love with it. It wasn't until I listened to LiSA's The First Take version of the song did I realize how much emotion the lyrics actually carry.
Afterward, I found White Notes' arrangement of the song and I just had to cover it. He put in a lot of effort and thought into it and you can find all of his notes on his video here:

@@Muanfela2003 no, I watch the sub. This is just a different translation for the manga pages in which he made his speech. There's a lot of different ways to interpret what he says.
Fun fact: old Japanese warriors were taught to savior and enjoy every meal as it could be their last, he wasn’t just being eccentric but he was enjoying every bite of his meal because he knew he could die going into this fight

But if I could suggest a song to cover, it would be "I Was Born For This" composed by Austin Wintory and originally performed by Lisbeth Scott as the ending song for the game Journey. It just celebrated it's 10th anniversary and Austin Wintory released an entire symphony version of the whole soundtrack on RUclips 2 weeks ago. For the song, 5 different vocalists sang the vocals in the symphony version, instead of the one soloist, Lisbeth Scott, in the original. Both versions have their merits, but I think you would sing it beautifully. Plus, the game is out on PC or PS4/PS5 if you've never spent 2 hours to play it through.
