- How to make Apple Crumble with silky smooth Vanilla Custard. This Apple Crumble recipe is so easy to make and the results are fantastic. Made with spiced juicy granny smith apples and topped with a delicate crunchy crumble. This recipe is definitely a favourite in my books and will easily impress anyone you serve it too.
Serves - 6
Ingredients -
Apple Mix -
1.5 Kg (3.3 Pounds) - Granny Smith Apples, Peeled, Cored & Diced
100g - Unrefined Caster Sugar (Substitute For White Caster Sugar)
1 tsp (1g) - Cinnamon, Ground
Zest of 1 Lemon
Crumble Mix -
100g - Unsalted Butter, Cubed & Cold
200g - Plain Flour (All Purpose)
50g - Unrefined Caster Sugar (Substitute For White Caster Sugar)
Vanilla Custard -
1/2 - Vanilla Pod, Deseeded
200ml - Full Fat Cream
400ml - Full Fat Milk
4 - Free Range Egg Yolks
100g - Unrefined Caster Sugar (Substitute For White Caster Sugar)
I use Unrefined Caster Sugar (Raw Caster Sugar) as it has a subtle caramel flavour. I find it compliments this dish really well.

Just made it today. I added some crushed walnuts to the crumble. It was splendid!! Thank you so much Jack for the easy to make recipe. I was a bit nervous when adding the hot milk to the egg yolk mixture, but it turned out just as you said! Best of all, the custard is not too sweet. Best apple crumble ever!

You need to cook it for slightly longer but you have to be very careful not to scramble the eggs. Haha they’re good towels 😉

Granulated white sugar is perfectly fine. You can also brown sugar for a deeper molasses flavour 😊

I freeze the butter and grate the required amount. Much easier to mix with the flour.

Yes you can use peaches. I’d cut the sugar down just a little bit if you are using peaches as they contain higher amounts of sugar. The Granny Smiths are more acidic and have less natural sugars than a lot of other fruits.

Good recipe. If you add a teaspoon of cornflour to the custard it stops it curdling.

Hi Selina, you can use a bit less sugar if you’d like as those apples are naturally a bit sweeter 😊

Does it make any different if using red apple instead?
I could be wrong but I believe because red apples are much sweeter that they caramelise too much and become too soft. I think a sour apple is better for this but I'm sure Jack will reply to you 😊
Like Brody said. They contain a higher amount of natural sugars and will burn faster. This can be bypassed by not pre cooking the apples and baking them raw. The reason Granny Smiths are the most popular for these types of recipes is that their flesh can absorb moisture and hold its shape, whereas other varieties, their flesh does not hold up and will turn to mush. You can jazz up the recipe by mixing some rhubarb or mixed berries through the apples for some different varieties. I hope this helps you! 😊

Depending on appetite, about how many apples for let's say 4 servings? I noticed about 8 apples in your recepy. Looked like about 6 servings by the end.
6 large to 7 small will be a good amount for 4 people 😊

There’s not a specific Apple that needs to be used. You can use whichever you like
