  • The Weber Charcoal Heat Controller is a cone-shaped device that you put in the center of your Weber grill. You fill it with a full chimney of lit charcoal and open all the vents. Alternatively, you can light the charcoal directly in the heat controller, but it's better to light them in the chimney to give the starters more space to create a bigger flame.
    The air flows from the bottom vents to the hot charcoal in the heat controller, then up to the top of the kettle, circulating the hot air down and around your food. This makes sure the heat is the same on top and bottom, so your food cooks evenly.
    Keep all the vents open during cooking. It's not required, but you could turn the lid throughout the cook to keep the airflow consistent around the sides.
    The direct heat area isn't very large, but you can turn the heat controller upside down to get more direct heat surface area.

    Have you tried it as a heat deflector? How well does it work?

      I haven’t yet. Probably will on my next rack of ribs.

      I’ve used it with the compact chimney. Works fine.

    No salt. No pepper. Silly me they must of feed the seasoning directly to the 🐮
