I'm hosting an Italian band at my house next week - they are playing at a local hotel here in Qatar where I live. I'm going to try to impress them by making your ricotta recipe for lasagna and fried cheese recipe. Hence if my guests like them I'll let you know. Keep your fingers crossed I don't screw it up.

Just a note on your method. I looked for a recipe for frittata di Ricotta, aka, Ricotta cheese fritters and ended up with a bunch of recipes like yours here. I found nothing like these in the Italian Academy of Cooking, nor any other of Italian cookbooks. Just online. Mine have no breading at all. Just the drained ricotta, lemon zest, pepper, flour and eggs. Make the balls, refrigerate several hours, then deep fry in 390 degree oil. Serve. My question, Why??? Why are all the online recipes so different from my cookbook that was published in the 1950s? Just wondering, as my recipe is much simpler to make, and, according to the book " These hot little bites are popular with before dinner drinks in Rome".

Omg my favorite my mom made these every Saturday for us there amazing.she also made us fresh tripe every Sunday nice Italian hot bread I still make these every other weekend my favorite my kids love it

Im gonna add some Mozzarella cheese to my filling
i would add fine diced prosciutto to put it over the top...I used to get them at a place on Staten Island called Pastosa Ravioli....they are addicting!!

In Brooklyn we add Proscuitto and call them Proscuitto balls, but either way they are delicious! It's a great recipe Joe!
PS: ignore the comments about licking your fingers, like these people don't lick their fingers or spoons when they cook at home, geez 🙄

@@Cookingitalianwithjoe I'm new to your channel and have watched a couple every day since. My stepfather's parents are from "the old country" southern Italy. I love Nonna Regina's gnocchi's she makes them with Ricotta instead of potato. YUMMM! She has passed so will have to try making them myself, maybe you know how to make them??? Anyway, wondering what kind of oil you use to fry for food in since I'm not wanting to waste olive oil and thinking olive oil might have too low of smoke point.

+Cooking Italian with Joe So I just tried making them. I've only breaded them so far, haven't fried them yet. I had a bit of a problem forming them.
When I went to put the balls in the egg mixture, they became very loose and felt like they were falling apart. I managed to get them into the bread, but that didn't seem to want to stick very well.
Hopefully they turn out okay.
+Trik Stari So I just fried them. Pretty dang good. Although my electric stove was a pain about maintaining temperature as always. They turned out pretty good considering.
Next time I'm definitely going to make the cheese a bit thicker, make the balls smaller, and double bread them.
