    I discovered your show today and it's like walking into a much tidier version of my own kitchen, complete with the music that I like to cook to! (It's usually either big band music or opera.) My gosh, I LOVE how you cook, and I love how much you love to eat the food that you cook! I'm swooning for your recipes!

    Arancini are like pizza...you can make the filling as you like. I went to school in Palermo and my favorite from the bar were "Arancini agli Spinach". Spinach, mozzarella & butter 😋 My mom makes the traditional sauce, ground beef & peas. Also 😋

    Parmigiana, Romano ,and goat cheese isn’t considered vegetarian and some say eggs are iffy. They look delicious and will try them . Like your recipes Joe.

    I made Arancini today, used my old Italian cookbook, it just said to use left over meat , so I used some meatballs that already had gravy on them and added some peas carrots and some Mexican cheese I had, came out pretty good but I am working on trying to shape them into more of an egg shape. to give it that authentic look. My dad would have been proud of me. I like your sight. My music playing is Jerry Vale.

    I would do them in two batches so as not to plummet the oil temp

      +Pat Stevens Pat thank you for the comments. Yes we sometimes struggle as some songs come through louder than others. I do appreciate you watching and getting through the video. Thank you for the comments and I will make more of an effort in editing to check music levels. Have a great holiday season, Merry xmas! Hope you decide to subscribe, Joe.

    Great video, only comment would be to always cook the vegetarian one first because you contaminated the oil already by cooking the meat ones first.

    LOL, at the 6 minute mark, I'm seeing this black bird climbing around your exhaust vent above the stove and wondering why you have a bird flying around the kitchen. Took me about 30 seconds to realize it wasn't a bird in your kitchen, it was a fly on my computer screen! Haha!

    You should not put so many in the pot, they bring down the temp and the arancini soak up too much oil. I like your mixture and your methods, but my Mom taught me to refrigerate the breaded arancini for about 20 minutes first, then to fry them.They get a crispier coating on them.

      @Cookingitalianwithjoe  8 лет назад +1

      Love momma! Thank you for the insight. Keep the oil on the upside when you start and oil temp will be fine. Also use a cast iron pot nd this helps to stabilize oil temp. Thank you for watching. Please subscribe and share our videos on your Facebook page and email with friends. Ciao, Joe.
