How to butcher a Whole Fresh Leg of Pork at home

  • Today Carnivores, I deconstruct a whole fresh leg of Pork into the Top (Inside) Round, Bottom (Outside Round), Eye of Round, Sirloin butt, Sirloin Tip (Knuckle) and the Heel. Not to forget the skin which will become Chicharron in a future video.

    I just bought a whole leg, I'm going to give the skin to my mom she'll make delicious chicharrones. The rest I'm about to try.

    That bone that you pulled out first would be great to bake then eat the insides .Yum. I love chitarons...so good! Perfect Weather for split pea soup Yum!

    What knife are you using? Brand? I just bought one whole leg of pork. But my knives are just not sharp enough.

      Thx Brother ... stay tuned ... in the next 4-5 weeks, I deal with each of these muscles then tie it all together with a "white board" finances - saving $$$ chat.
      Also ... gonna make a "How to" tie my butchers knot, as well as a "back to basics, how to" knife sharpening vid ... gonna go ALL THE WAY BACK to Trade Skool for these vids ...
      1st day at skool ... instructor said ... "if you can't tie a knot or sharpen your knives ... you don't belong here"

    Hi great video. I have a question to whomever knows. When cooking fresh pork I mean from the farm to the table fresh, do you have to cook it in a special way? Like deer I hear they cook it in a special way to get rid of the gamey taste. I'm want to know if it's the same with fresh cut pork. Thanks

      No ... fresh from the farm pork can be treated the same as store bought ...

    wow what video by an expert butcher. MY only recommendation is naming and identifying the various cuts. We need a reference to for example the hock or the top and bottom of the leg. Otherwise amazing!!
